I am doing this now. I saw green growth in the middle 8 hours after I put the end in water. The next day it's 1/4 inch. This is the closest thing I have seen to magic.

If you take a super thin, almost see through slice off the bottom to make a fresh cut it will happen even faster as that part gets dried out when harvested. When the roots start to get approximately 3/4" out the bottom I go plant it in soil and it makes a full head again and again.

Yes, I have regrown some of my vegetables. I tried the romaine lettuce first, put out roots and I transplanted into a pot of soil. Rather than putting out a bunch of leaves, it grew more like a stalk with small leaves growing off the stalk. The stalk and leaves at one point toppled over so I staked it upright again. After about a month, I decided to harvest the leaves to make a very small salad. After that, the core planted in the soil seemed to go into shock, never regrew anything and eventually rotted away. I've got a few more romaine cores going, plus a lot of scallions, celery, beets and bok choy. I've got green leaf lettuce and arugula, started from seeds, growing in a small self-water planter with soil. In another self-watering planter, I'm growing spinach from seeds but it's going to take a few weeks for the spinach to get big enough to start harvesting. They're all in my windows since I live in an apartment and have no outdoor space.

Lettuce is an annual plant. It wants to throw up a seed stalk at the end of its life-cycle as a means of dispersing its seeds. The leaves on the stalk are not only small, they are bitter because they are full of latex. Next year, collect the seeds when the flowers dry out. You'll get hundreds of them from each stalk -- if you are alert.
