Modern Farmhouse Kitchen Nah, not if you cook out the wine before it goes in the oven. When you cook out the alcohol in the wine by boiling it, your left with this amazing sweet syrup that goes well with the strong sausage and onions.
Thats why gordon boiled the wine for a little, to cook off the alcohol, and to let the wine reduce in the pot, before he put it in the oven.
Wine is great for a starting base for sauces and gravy's, to wash all the flavor off the bottom of the pot so the flavor goes into your sauce. I do it all the time.

I made this tonight and it was so tasty. The caramelized onions brought such a sweetness to the dish. I also made a cranberry and persimmon sauce, it brought together a complexity of flavor that complimented one another.

That’s what happens when you use the proper knife and have some skills.
But it's just about slicing the onions, then you can just use your hands to separate the layers. It's nothing compared to having to dice onions, especially into equally sized pieces for a mirepoix.

cooked this sausage hotpot today for my 86 year old mother. Added fresh broad beans and asparagus from the garden and a home made vegetable/nut sauce to be a more healthy version of gravy. She absolutely loved it, as did I. An ideal, foolproof way of cooking a beloved English dish, namely bangers and mash.
