pineapple is more sweet than sour. knowing mallmann, cream should be more sour and sweet...could be with yolk egg, sugar, butter, lemon...maybe

Patagonia I believe. I’ve seen his Chef’s Table episode on Netflix several times and they show him at his spot there in the middle of nowhere
Scotland. I watched a video right before this one from the same company and Mallman was talking about how “beautiful it is here in Scotland” and it was the same people and place. He’s from Patagonia of course.
