    I love how polarizing this video is. One thing for certain is this dish brings about STRONG feelings from everyone. Either you tear up or laugh and mock. Would love to try it for myself.

    Scorched tomatoes add flavor you have to try it. I've been scorching my food forever just discovered Mallman few months ago. Love outdoors cooking every chance I get.

    Hi, I would really love to train for Mallmann, he's an amazing chef and a very interesting human being. he captured my emotion when I first saw him on the episode of Chefs and he talked about his way of cooking and living, it's really inspiring. I was inspired to do more things and chase freedom and not to get bound into anyone or anything and just truly, fully, enjoy life.

    Has anyone tried making this at home? If I started dipping ham in coffee on a Saturday morning, and burning tomatoes till they’re totally barbecued, I am not totally sure what the reception would be from Mrs Egret..

      I tried something a bit different, but with similar flavors. I cooked leftover roasted ham with coffee, and the savory/bitter combination is indeed pretty magical.

      Eating burned food increases free radicals in your body, that can cause cancer. Vitamin C binds free radicals and can counter act it somewhat. Ideally you don't want to eat burned food too often, but do live a little. ;)

      @@benthao4816 no i have not, i use coffee with meat, beef with a coffe rub is great but just boiling ham in this reduced coffee sirup i dont know. I mean Francis mallman does it so it cant be terrible

    Sometimes Francis Mallmann pushes the edge too much....he turned from having high quality and sophisticated french style restos to this type of outdoor and simplyficated cooking....but he´s a great chef no matter what.

      I think he reached the peak of sophisticated cooking early on and it didn't satisfy him. You see the way he treats food now, it's like he's in love, truly in love with the simple way the heat pulses through and creates layers of burnt, crispy and soft without really messing with the food artificially

    to people who must have a developed sense of what taste is, and rely on fringe dwelling experiences to discover new dishes and taste combinations, i can see how this is what they say it is.
    but to the vast majority of people this would be ash ridden, burnt, coffee soaked hell.

    As Argentinian , i can't afford this kind of breakfast, first of all , that jam that is using is priceless and nobody here eat that at morning, our regular breakfast is Cafe con Leche (Coffe with milk ) and son toast with butter and jam or only jam , maybe some croissants with jam and cheese or just the croissants alone , maybe a sandwich, but thats all. i love Francis but this is just staged by him.
