Eggplant or Bigan or Aubergine is one of my favorite vegetables especially Bigan chooka. Good recipe chef , one small correction Baba Ganoush is Middle Eastern not Italian but you know I have nothing but love for you brother.

I seen too many videos of this guy making masterpiece with food. When I'm in Guyana, I gotta check this place out and have this man cook for me. I think this is a good place to bring some American co-workers, who never had Guyanese food to get a good first time experience. Does anyone know how to make contact with Back Yard and sort out the details?
