A Burger Scholar's Quest to Recreate a 121-Year-Old Burger | Burger Scholar Sessions

- George Motz is on a quest to recreate one of the very first burgers in the world-the 121-year-old hamburger sandwich from the historic Louis' Lunch restaurant, a.k.a., the longest continually-operating hamburger restaurant in America. Using custom-built equipment and accurate cooking techniques, George will attempt to do what no Burger Scholar has done before and faithfully make one at home, for his fans. It's a crazy science experiment involving welding, engineering, and a bit of madness-all in the name of hamburger history!

*You did it George, congrats! Like if you think Motz and his welder deserve a Nobel Prize*
👍🏽
I'm watching this from New Haven Connecticut. Surprisingly I never had a Louis Lunch burger. I Recently bought Wahlburgers patties and omg yum. The meat was sooooo tender. Thankyou Donnie and Marky Mark
that guy needs meds lol

NOT IF YOU CENSOR THE COMPLEMENTS...
Of course he burned his nose, lol
George burns himself for our entertainment 🤣😂
Always lmao
I thought at 6:54 he was about to burn all his hair on the camp toaster! :)
i know!... what a worthless imbecile, right?
Ive burnt myself and a few others doing knife hits :(
George Motz finding new ways to hurt himself while cooking or eating burgers is one of the most fun parts of this series, like who else burns the tip of their nose doing this?
Me probably
That's the real reason he had to recreate the broiler.
i wonder what weird sexual things he does with burgers in private
I think he's managed to find a way to burn himself somehow in nearly every episode of this, lol.
@Jacob Bradford he's the burger effer and I"M the weird one?! come on, be fair
I would like to see George on Hot Ones, BUT.. instead of wings you guys eat spicy sliders with the usual sauces.
That's content gold. You can thank me later, Complex.
Doesn't that mean they would have eat 10 sliders?
I guess they could just take a bite each but that might be a bit of a waste.

I love how this man has probably ate more burgers than any one on this planet, yet still gets jazzed when he eats a burger on white toast
With no condiments. Still, it looks good don't it. :-)
Never gets old, I'm sure.
ggg... good grammar goosen... that was never your nickname, huh?
best way to have it old school, just like having a baloney and cheese sandwich on white bead
@@toddlower5546 Grease is a condiment ;)
I like how the welder is like “idfk if this is gonna work” fully acknowledging this is a crazy project
And he'll soon be swamped with people trying to order it.
Both things are being cooked with a butane flame. ? Gross

i am so proud of george
Oh hey, it’s berd
why? he doesn't deserve to elicit pride
the biggest burger on the show is that pink slush between his ears
Berd boi watching the Burger boi
Your videos give me hope for humanity
George Motz is like that college professor that truly loves what he talks and teaches about, which in turn makes you love it as well.
Why do you say that because he’s old?
George Motz literally taught food history at NYU so you're more right than you know.
George Motz looks like Wolverine if he found inner peace.
Inner peace and an obsession for sandwiched meat
🤣💀💀💀
Lol. And you know if he was he'd use thoes claws to cut EVERYTHING 🤣
I'm thinking more "John C. Reilly gets his life together"
Johnny Knoxville if he never got hit in the head.
Love the history of it all. And seeing the different ways they do burgers around America. Along with his funny charisma. Can never get enough George!!!
settle down. get a room. you him and a burger
George Motz is an aspirational hero; he loved something so much, he made a living out of it, sharing that love with anyone who would be willing to listen.
It's a beautiful thing, really.
This show is incredible. I have never and will never scroll past a George Motz video without clicking.
settle down, fella. maybe get a room: you, george, and a double cheeseburger
I love when George gives us a history lesson with our hamburgers!
Of course he burned his nose when trying to smell it 😅
PRO TIP: if you visit Louis Lunch make sure to ask for ketchup loud enough for everyone to hear, it can be noisy inside the building, you're welcome.
Hell naw 🤣🤣🤣
You're looking to get someone stabbed. Lol
Why? Whats the appropriate condiment to use?
@@nathanwalker6360 Mustard, IF you REALLY need it.
Dude what the heck? I just did this and woke up in the icu with multiple gunshot wounds
If any of George's previous antics haven't already solidified him as Chaotic Good, that intro definitely does.
Damn son. I love/ hate this show cuz how I gotta go to the store and make this happen. Worth it.
"Burger Scholar Sessions with me, George Motz!"
*blow torch turns on
"NO GEORGE, PLEASE!!! I HAVE A FAMILY!!!"
I cannot express how much I love this dudes laugh, everytime he does it seems so genuine and heartfelt and he really seems like a good/nice human to be around. Unless its all an act lol.
fckin more impressive if it was fake lol, the vibes are what makes this show, he could be talking about physics and it would still be fantastic

The absolute terror of seeing George with a blowtorch 😱
That “blowtorch” looked like a tiny tiger torch.
I just love seeing the guy so excited about burger history, it is really so contagious!
I love everything that goes into George’s videos. He is just so genuinely positive and outgoing it’s hard not to feel good watching him do what he does. Keep up the great work George!
Literally engineering new ways for George to burn himself, was not expecting to see a nose burn
He can cross that off the list of burns.
one day he'll experience the greatest burn: his soul burning in gehenna
This is the content I needed to wake up to on my Birthday... thank you George Motz & the rest of the FWF team!! ❤
AY, happy birthday man!
Happy birthday!
Happy birthday!!
This guy has the most infectious enthusiasm I have ever see and it feels completely genuine. I love you George Motz, we all love you ❤️
George Motz: "Oh shit, doesn't smell good, something's burning badly."
Famous last words of George Motz, inventor of the first and last toxic smells burger.
If the folks at Louie's are up for it, I'd love to see a blind taste test comparison between George's contraption and their recipe. Could be a fun collab on Alvin's Burger Show.
The thing I love about George (other than the burger knowledge) is his contagious joy and enthusiasm.
He's the biggest kid, and it's wonderful.
George: *almost burns his house down*
Also George: "omg toast looks good! "👌🏻
George, you’re not just a burger expert. You’re a mad burger scientist, and that’s what we love about you.
I love this guy. He never fails to make me smile every time I watch these.
By far, the Motz-man and his burger scholar sessions are my favourite First We Feast production.... this is stuff that we can all basically do!
Just ordered my burger, using this time to build an appetite! ❤️ You never let me down George!
First time witnessing this joy in George. Never knew he and this existed- this discovery is what I am most grateful for today. 😎💁🏻♀️🤓💕
I just got home from a half day of work and clicked on CZcams and saw that you posted and I smiled so big and this was just amazing like always. All my love from Michigan ❤️
Thank yall for this video! A few months back I was trying to see if anyone had the designs for the broilers and even thought about making cast iron versions but this is way easier. Love that burgers loves try to bring innovation to the masses.
Been to the Louis original store. The burger was good, but the owner talked to my mom and I for a full hour, and even gave us some free stuff. Really good guy.
He helped me with car trouble once and wouldn't take a penny for my meal. Stand up guy.
"The question is if it's gonna burn down your house"
They say if you wander around where old burger scholar Motz's house was, you can still smell grilling hamburgers.
I love you, George. It always calms me down to the most basic level when I hear that intro. One of the most wholesome men I know on this planet.
thank you for all you do for this channel, george.
We need a counter in the corner, counting how many times George burns himself in each episode.😂
I can't deny that the burger looks amazing af
@Anna nice ❤
The video only been out for 1 min, how tf did you watch all 11:35 already?!?!
@@bigmaster2137 I skipped to the end just to see the burger first, then watched the entire video lmao
WOW! what a great expansion and contuniation of Mr. Motz knowledge. His cooking videos are awesome, but the education and history of the origin of the foods is much better displayed through the spilt of the content. One side is similar to a tutorial, and the other is educational. Both are entertaining and more than worth the time to watch.
Always look forward to George's videos every week the new season is going on!!!
Man, I wish I had a welder friend named Charles

I haven't even watched the episode yet, but I'm already salivating... is this normal?
Brilliant! Reminds me of an old A-frame toaster we used to have for our weekend house, already an anachronism in the mid-60s. Had to toast one side, then open it up and turn the bread to toast the other. Fun!
I’m revisiting this video after I finally got to visit Louis’ Lunch today. It’s an amazing experience to eat.
I wonder if it's a thing at Louis' to order a "bottom burger" that had the juices drop down on it from the top one?
There's no such thing, because they constantly flip the grilling grate so that each patty spends time in both the upper and lower positions, to ensure even cooking, due to the varying temperature gradient inherent in a vertical broiler. See @1:23
@@PatrickLienCT can't you just let a man dream?
@@jeralgrant 😂 I love your passion, dude.
Only way it would make it palatable, imo
Love the history, but good lord it looks like we've made some important progress on the burger in those hundred years.
Yes, the condiment that took burgers to the next level and into the 21st century, BACON!
@@RWZiggy Thank god for the invention of the bun. This white toast looks like what you make when you don’t have any groceries and can’t be bothered.
There is competing claim to first hamburger sandwich, seems 1880s and one place supposedly had owner's wife making buns for them.
en.wikipedia.org/wiki/History_of_the_hamburger_in_the_United_States
God, I love George's reaction every time he bites into a burger. He always looks so happy and genuinely impressed with his attempt.
i really do appreciate George's enthusiasm for his passion. Absolutely unique. 🎉
As a fabricator, I suggest not using that setup much. Those burners aren't designed to operate that way and will start burning paint or plastic parts. Those vapors will end up in your burgers or lungs. Just trying to keep your around longer, George. Thank you for the videos!
i don't think he plans on using it any longer than the time it took to make the video. i wouldn't worry...
For a re-tool of that vertical broiler, I'd find a certified oven repairman who can swap out the round heating elements for some rectangular ones. That would give you more even heat distribution within the cooking chamber.
This could litterally be the only thing i watch and i would be happy! Keep them coming!
Love your style George. Always looking forward to your shows.
Nice skateboards
According to the US National Museum, Library of Congress, the Danish immigrant Louis Lassen was the first to throw a hamburger over the counter. It happened in 1895 in the café Louis' Lunch in New Haven, where the Dane served steak between toast bread with either onion, tomato or cheese. Lars form Denmark 😁
Love the effort in this!
Whomever gave Motz a show has done a great service to society. This dude is happiness, excitement and zen all formed into a delightful person who spreads happiness just by being himself
8:29 "...someone as insane as me..."
We need to congregate George Motz and all other crazy like-minded fanatics in one room.
What a riot it would be, see them all cracking up whilst munching on burgers.😆
Was it really debunked though?
Wolverine's dad is the burger master. ;)
He gets SOOO HAPPY , and i love it🥸❤️🔥
So glad this series is still going and holding strong
Gonna need that broiler to hit the market ASAP. I'd pay embarrassing money to have one...once it works.
I love George and the history of Louie’s Lunch, but honestly this seems like a bad way of cooking a burger. The flames & heat want to go up, so it makes more sense to have a burger over a grill and just flip it. It also allows you to melt cheese over it, which you can’t do vertically.
Also it requires very lean meat to avoid flare ups, which yields much drier burgers.
For burgers? Why? No char, can only use lean meat, can't add anything onto the burger while cooking it, like cheese, all of the minute amount of fat drips off the burger as it cooks. What's the benefit that makes it worthwhile over all of those downsides?
@@johnr797 It's just the gadget aspect. It looks like it would be fun to play with and see if you could get it to work. I don't think there are any benefits over just a flattop grill but that doesn't make me wanna mess with one any less.
@@pothospathic fair play, I'm sure there are many things that could cook in interesting ways in there. I just ain't paying for a burger out of one lol
Hey, I love Louis’ Lunch. I love it for the history, the purity, the schtick. But if I were going to do such a simple thing as a patty melt with salt, pepper, onion, Whiz and a tomato, I’d jack up the flavor of that patty. Brisket, shin, short rib- I sure wouldn’t do it with sirloin. Unless the sirloin has some dry aged stuff added. I had a Louis burger last week for the first time in a few years and wondered what I’d ever found tasty about them. It needs some damn UMAMI. They are pretty bland. But, like I said… hella cool.
Motz's energy and enthusiasm for what he does is so endearing
George is the best!! I literally can't wait for more content. I need MORE!! Lol
Imagine if there were ever an episode where he didn't burn himself at least once? It just wouldn't feel right.
Has anyone _boiled_ a hamburger patty ?
I swear I've seen this on an episode of Kitchen Nightmares.
I have but it didn’t go into a burger though
There's a steamed one George covered before 🤔
@@toualee1430 How did you arrange it?
By far the best type of videos on this channel
I've nevet heard of this guy before but he's absolutely delightful
“Processed cheese spread “ as a Frenchman, never have a set of word shaken and disturbed me to my core this deeply
For any other cooking I would agree with you. But we are talking American style food and cooking. And let's face it ballpark nachos, philly cheese steak and Louie's hamburgers wouldn't be the same without processed cheese spread.
Not a fan of wiz normaly, but it works' here. They make a damn good burger.
Not even "box wine"?
processed cheese is not something evil, it really is made from real cheese made in the traditional way. it gets a bad reputation mostly because most people don't bother to do any research on the subject to see how it is really made, they just assume it's an artificial or fake product.
France, the country that produces over 100 thousand tonnes of processed cheese each year? You better leave the country quick man, if the concept disturbs you so much! As a French person myself, I can't fcking stand pretentious people like you giving the French a reputation as arrogant.
Has the meaning of a steak sandwich changed over time? To me, a steak sandwich is just a steak served on a slice of bread that still necessitates a knife and fork.
An interesting point of reference in the evolution of the hamburger, but it doesn't sound like they definitively put a hamburger steak/patty between two slices of bread and ate it with their hands.
You are the mad scientist of burger science, and bless you for that.
George is such a treasure. I love how deeply excited he is for the history and making. this man is made out of oxytocin
I'm pretty sure no one has attempted to recreate their cooking method because it's ridiculous and entirely unnecessary lol
Also: Very lean meat and processed cheese spread on white toast. Gross lol

So blessed to have gone to college in New Haven and to live close by now.
In the 19th century, the eponymous minced meat apparently arrived in the USA via Hamburg with German emigrants. At the World's Fair in St. Louis in 1904, where this snack was first served, it was simply called Hamburg.
I like how much fun he has with this series
As a true hamburger snob from the great land of Connecticut, I am so thankful for Mr. Motz & his faithful dedication to hamburger history. There's nothing like Louis' Lunch-- as the Duke's Men of Yale immortalized in their lauded songs-- but this is an incredible recreation. Love to see it. Big respect.
I just love the pure child like excitement George always shows when he's talking about, making, and eating burgers. The hand farts also help this statement :-)
