  • Get your passports ready, it's time for another international burger episode of Burger Scholar Sessions! George Motz is here to teach you about two icons from aborad-the Islak from Turkey (a.k.a. the 'wet burger') and the Bøfsandwich from Denmark (a.k.a. the 'gravy burger'). One is steamed in a tomato sauce, while the other is doused in rich pork gravy. What do they have in common? They're both a hot, wet mess. So wish George luck as he takes you on this international burger expedition!

George must try an iconic burger of my hometown Monterrey, Mexico, its called a salchiburger, its a patty smashed on a tortilla press, then grilled on a charcoal grill, with Chihuahua cheese, american cheese, ham, salami, a mexican red grilling sausage, with shredded lettuce, raw onion and a tomato slice, on a margarita bun, its kinda a cubano but in the shape of a burger bun, with mayo, mustard and avocado on the bottom, its mindblowing!

According to the OG recipe, the sauce has some garlic. The patty has no parsley or onion at all but an unholy amount of garlic. The acidity of the tomatoes is balanced by none other than, well, ketchup. If you don’t want to use ketchup, you can probably swap it with Worcestershire sauce to get the same sweet umami note.

So awesome, almost a year ago I wrote to Motz and asked him about whether he'd had the bøfsandwich. He hadn't at the time. I do see though, what I would say is one error in the ingredients, and that is the remoulade, the remoulade to be used here is a Danish style remoulade, which differs from the French varity mainly from how it lacks the herbs, but adds pickled cauliflower, carrots and cabbage and contains curry powder, which gives it a much yellower color.

Hey, Burger Scholar! Scholar me this:
In Calgary AB, back in the 1950-60s, on 8th Ave beside the Palace and across from the Capitol Theaters, there was a little hole-in-the-wall burger shop. There was no inside seating to speak of. You got your burger and took it away. Most of the indoor space seemed to be occupied by a slow-braise apparatus that moved a line of burger patties along a trough of tomato sauce. Toward the end of the machine, cooked burger patties were floating in a open lazy-river of sauce, to be picked out for the next order. There weren't many options for toppings that I recall, mainly chopped white onions, maybe shredded cheese. The buns were not steamed, like the Turkish version here; but they were definitely soggy from the warm sauce. The bun/burger combo was wrapped up in a foil wrap to stay warm.
All I can say is that I still remember these burgers. I think the basic was $0.25 and with cheese $0.30. They were sort of a cross between a meat-ball sub and a burger.
I cannot imagine that the only location for that burger/sauce/braising apparatus was downtown Calgary, but I never saw or heard of another location, not even in Canada.
Do you know what this machine was? Who made it? When and where it was used? Recipes for the tomato braise? And make one in your own burger shop...

I used to put gravy over a burger as a staff meal at one place and it made the burger so great

Tip: Dont eat the top bun. Use it to soak up the last gravy from your plate, once you have eaten the bøfsandwich

As a Dane i can add that a Bøf-sandwich historically in Denmark is served from hotdog carts around the cities. They are a dry burger. Or basically everything this guy did, but without the gravy. So definitely something you can eat with your hands on the fly.
The addition of gravy is somewhat modern, and more or less a restaurant addition.

Well, in the 1980s, when I was a kid, the gravy allready was something you could choose to add to the bøfsandwich, at least in Jutland. In this video, the gravy could be a little thicker I think. Looks good though.
