FULL RECIPE:
1 large red onion
3 cloves garlic
1 red chilli
1 large leek
2 courgettes
300g broccoli
1kg sweet potato
fry down
100g bake with bread crumbs
6 sprigs of fresh thyme
1 tsp salt
2 tbsp oil
500ml veg stock
Bechemel sauce
350ml oat milk
3 tbsp olive oil
3 tbsp white flour
pinch salt
pinch ground nutmeg
2 tbsp nutritional yeast
whisk
Chop the onion, garlic, chilli finely. Chop the leek, courgette and sweet potato into small bitesized pieces (scrub the sweet potato skins and remove any unsavoury bits and include) chop the broccoli into florets and the stalk into fine pieces.
in a large oven proof frying pan add 1.5 tbsp of oil and allow to heat up on high heat, add the onion, garlic and chilli and fry for 3 mins. Next add the leek, courgette, broccoli and sweet potatoes. put the lid on and leave to stew for 10 mins. Once the sweet potato is cooked remove the lids and mix through ensuring to include any charing at the bottom of the pan.
preheat the oven to 200 degrees
in a separate pot turn on high heat, add 3 tbsp of oil, sieve in 3 tbsp of white flour and whisk for 1 minute. Add a pinch of salt, black pepper and nutmeg mix and the 350ml of oat milk. Whisk continuous allowing to come to the boil. As it comes to the boil it should start to thicken. Remove from the heat and add the nutritional yeast.
Add the bechemel in onto of the veg along with 500ml of veg stock, 2 tbsp tamari and mix well.
in a small bowl add the fresh time onto of the bread crumbs and 1 tbsp of oil. mix well and sprinkle on top of the casserole
bakes at 200 degrees c for 10 mins until nice and golden
enjoy!

Tried this one out tonight. It's a nice and easy to cook midweek meal. Next time I'll take less veg stock and more of the bread crumb mixture. Maybe I make some bread crumbs in a pan as they got soggy in the oven.

I did this one and it is truly AWESOME!!!!!!!! I had to go out after it was finished so I didn't get to serve it till the next day. The overnight rest in the refrigerator made it ever better.. I served with some spiced up quinoa and it was truly delightful... Thanks, guys. I also just got the new book and can't wait to start the recipes in there... MMMMMMM

Update:
I made this last night. Holy bejesus it was incredible! My favorite thing I've made. I made a few tweaks, I added mushrooms, swapped the leek for bok choy as that's what I had, and added buttercup - sliced into cubes which I boiled along with the kumara to soften them slightly before cooking (so I could have the skins on the buttercup too). I am slightly obsessed with buttercup atm so I'm putting it in everything haha. Amazing recipe guys! THANKS

Loved the flavor of this - the veg stock + bechamel is definitely the secret. Makes the veggies taste really stand-out good. Would make great leftover lunches for the week and has way more vegetables than I would normally be able to fit in a work lunch meal.

Grinding walnut halves (without shells, of course) with the breadcrumbs ups the nutrition value. They brown very quickly, so under the grill rather than the oven perhaps.

Tried it this evening, the volume of veg was twice what my dishes could handle so I made soup with the extra veg and used all the bechamel sauce and 300ml of veg stock (the rest of the veg stock went towards the soup!). Dish was delicious! Next time I’d either chop the sweet potato smaller or cook it for longer as some cubes were still crunchy! I’d also half the volume of veg and use more bechamel sauce and no stock to make it more creamy.

1) do you think some truffle oil or salt would go well in the white sauce or overpower the dish?
2) could you double the white sauce & reduce the veg stock to make it thicker/less runny?

Do you think a can of rinsed flageolet beans might be nice added to this dish if you want to increase protein content? I like the idea of using oat milk for bechamel. I have found that it thickens up quite a bit when heated (e.g. for hot chocolate).

Don't use metal utensils on non stick pans guys! It can scrape off the non stick coating and our bodies can't get rid of that! (watch the film Dark Waters). Use plastic or wood instead. The dish looks great though, I'll be making that! 👍😊
