Good idea on using the flounder as the wrap to carry the other 3 fish to make the trio complete. I love the making and experimenting with sauces. I've been about so so with my creations but at times they make the dish. That's why I like trying different combinations to see what happens.

This has been another killer dish/ recipe!!! Being a professional chef myself, you would be happy to know that I NEVER waste the odds and ends of any produce and any ingredient for that matter. Like you’ve said time and time again, everything has a purpose in the kitchen. The problem is that there is a lack of education in cooking where people don’t know how to fully utilize their ingredients and of course there’s laziness. Like I stated before, this dish looks fantastic! I really like how you added Sautéed spinach as the accompanying side, and the roasted Roma tomato as the garnish is a very nice touch! Very tasty. Look how slow the fish cooks. Take care with fish and white wine, don't put that in an oven cuz the wine renders the sauce bitter. Just slowly baking. You could wrap the fish roll on a fine slice of salted bacon. That is for me a dish you could give as a main dish on feasts. But I would do the hollandaise beside the fish so you can still see the fine white fish. At night new dishes are thought out. Festive
