Om Ali Arabian Style Sweet Pastry Pudding

- An Arabic style bread pudding, or rather croissant pudding. It’s made with milk-soaked croissants, with nuts, coconut and raisins. A beautiful sweet pastry pudding!
This version uses three types of milk, including cream, full cream milk and condensed milk.
I first tasted this dish in the Dubai desert as per the video, so I dropped in some of my Dubai footage. The dish is also known as Omali, Umm Ali, or Oumm Ali which I believe means Mother of Ali.
This version is made using pistachio and flaked almonds. I prefer to toast the almonds first to release a more pleasing flavour. The pistachios are also toasted but just enough to activate their flavours. The dish is soaked with the spicy milk mixture and then baked until the surface is a nice golden brown. You may say, it is an Arabic style bread and butter pudding.

This is actually a very fancy version of Om Ali 😋. Om Ali is an Egyptian dessert, but Egyptian households are not usually very rich, so they can’t afford cream, condensed milk and all the nuts. I grew up eating Om Ali and my Egyptian grandma would make the most delicious Om Ali on earth but she’d only use corn flakes or toasted phyllo dough, only milk, coconuts and perhaps some peanuts and raisins if available and it turned out heaven every time. Also a fun fact, if my memory serves me well, croissants became accessible for middle class people in Egypt in the late 90s, early 2000s. Before that, croissants were only available at hotels. I don’t remember ever having a croissant anywhere else as a kid, haha. Anyways, this recipe is more than delicious and since I can now afford the ingredients that my grandma never did, I’d love to taste it this way 😊.

Om Ali (Ali’s mother) is an Egyptian dish. I think he did an amazing job in recreating it, it’s traditionally done with a very thin like flat break called rokak bread, but I’ve also used croissants and actually prefer it more! Thank you chef! Great job! Merci!

The real story behind the dish and the name occured in Egypt a long time ago and it's really interesting cause it's adish to celebrate revenge and it was basically made from bread, milk, sugar and fresh cream or butter

I’m from the UAE, thx for the recipe and video I really like it 😍💯✨!! .. The crowson can be substituted with puff pastry! . Actually , we add the milk gradually and when the puff pastry is absorbe it we add more. Also, we didn’t bake it until the milk is absorbed .. the taste is better with milk sauce !! Whenever I make it I spread some thick cream above the last layer then I put it in the oven with the top heat only, until it becomes golden brown !! .. It turns out super yummy & tasety !!

So easy to make yet so delish.
