  • What is fondant? In this edition of Cake School, Geof Manthorne, Charm City Cakes Executive Chef and longtime fondant aficionado, takes us through the history of fondant, background on how Charm City Cakes started working with fondant. Watch for tips that we have learned over the years, including how to add color to fondant, kneading fondant, best work surfaces for good results, and proper short term storage.
    What you will need:
    2 lbs rolled fondant (commercial or homemade- see below for our how to make fondant video)
    4 tbs corn starch
    A clear work surface (ideally flat, sturdy wood table top)

    Geof is my favorite! He's been my favorite from the first episode of Aces of Cakes. I love his dry sense of humor. And I totally understand what he means by trying to buy your fondant already colored, especially with red and black. I made a cake for my parent's anniversary years ago and made my own fondant. I needed red and I used more than one bottle of red food coloring (it's what I had on hand, no gel) and it was still pink. They still appreciated the effort. It was supposed to be a Cracker Jack box but the coloring made it look super faded. lol

    Geof, you are an outstanding teacher. I really enjoyed this, even though I have never worked with fondant. I so miss Aces of Cakes.

    I've never used fondant but, watching you color it makes me wonder if I can use it? I have arthritis in both of my hands so I just don't know. Loved the video!
