  • Now that you've oriented yourselves to the key elements of fondant, its time to put that knowledge to work! In this edition of Cake School, Geof Manthorne, Charm City Cakes Executive Chef and longtime fondant aficionado, takes us step by step through the process of rolling out fondant, covering a round cake, and trimming a clean edge.
    What you will need:
    - rolled fondant (commercial or homemade- see below for our how to make fondant video)
    - 4 tbs corn starch
    - A clear work surface (ideally flat, sturdy wood table top)
    - iced cake
    - rolling pin
    - fondant smoother
    - pizza cutter or sharp knife
    - craft knife or sharp knife
