  • On our recent trip to Lexington Market in Baltimore, MD, we decided to purchase and try chitterlings for the first time. Naturally we had to capture the experience to share with everyone!

      Dawn cater Thanks. I nearly drove back to Baltimore again this weekend for more chitterlings, but it is further than I wanted to drive just to buy one thing. LOL! I've watched videos on the preparation and that too looks like more work than I am willing to do to prepare my own at home. Guess I'll just have to wait until the next time I'm in town.

    Its good to see folks willing to try other foods. lol. Now one should only eat them three to four times max per year. I can only eat them on new years cause they will spike your HBP. They usually cook from raw approx. three hours on simmer until fork tinder. I like modest amount of vinegar and crystal hot sauce approx. 1 teaspoon each but this varies according to taste. You are to complete the meal with potato salad, yams, greens and corn bread. Bean pie you go on now with your bad self. lol

    Try eating potato salad and collard greens with them. Maybe some corn bread.

    I dont eat pork coz i'm a muslim so don't know how they taste like. But i've eaten quite a few of cow's tripe. Nothing fancy for the preparation, just boiled tripe sliced to small pieces, finely sliced cucumber and fish crackers/crisps for crunchiness, and drizzle it with sweet thai chilli sauce. Not many people like eating tripe because of its texture and slight gaimey after taste but i think it's not too bad. I'd rather eat that than the processed fast food like mcd. And tripe over here is quite cheap and has the origin of being the food for the poor. Keep sharing this lovely little food trip, Paul..

Beef tripe can be found in some large grocery stores here in the USA, but since I have not been trained in how to prepare it I have not tried, but I hope to eventually find it available from a cook that is experienced with the dish.     Y'all need some cornbread with it. I like mustard and sometimes hot sauce with them. Now I want some! 😁 I only eat them once a year tho. Takes too long to clean, and I'll only eat them if I've cleaned them. 😁 Hurry New Year!!!

    Jeez, I sat and watched this entire video, start to finish, getting extremely jealous of that meal -- even the pie, lolol!
    Chitlins are sublime. I grew up in Detroit, but my grandma was from Georgia and made amazing Chitlins on most holidays. If I had it my way -- and thankfully I don't -- I'd eat chitlins everyday. Thank goodness there's no place around here I could buy them cooked. It'd probably kill me. lol

      Thank you so much! It was an excellent meal. There are only a couple of places that I know of locally that sell chitterlings, and I am just not ambitious enough to make them at home. We also grew up in Michigan, in the "thumb", but I don't know of any place there where you can get them. Thanks for joining us! Paul

    Im 45 and been eating them since i was a kid. Big thing here in the south on holidays. Next you must try chitlins fried. Great with potato salad and greens

    Chitterlings aren't my thing, but many people who say they wouldn't eat that do. If you eat pork sausage, then that's what you are eating, ground up pork shoved into an intestine. :) Up here in Cleveland, Ohio we have essentially the same thing as the market you went to. It's called the West Side Market, it's been open since 1840. Thanks for the video!

      I don't know about the vinegar but we used to eat them with FRANK's HOT SAUCE. We would have them every Thanksgiving. I haven't had chitterlings in over 40 years. I like them too. 👍🏿👍🏿👍🏿👍🏿

    Tabasco sauce is not the kind of hot sauce you want to eat with Chittlins. Something with a little zesty flavor is what you want. Franks Red Hot Sauce, would be my choice.

    My family eat chitterlings once a year between Thanksgiving and New Years. We eat them with hot sause, coleslaw on the side and white bread. I like some gingerale to drink for a nice burp. I am 66 yrs old and have been eatting and cooking chitterlings for over 50 yrs. I prepare them with onions, garlic cloves, celery and some chicken bouillon. I put a red pepper in my chitterlings, too. There was a Restaurant in Carollton, GA that cooked chitterlings once a month between October and March and our Caucasian brothers and sisters would line up around the building to get to those chitterlings. The chitterlings black cooks prepared different ways-- par-boiled, barbecued and fried. I had the Mayor of Carrollton come up to be with a plate full and said hello to me--he knew my Dad, a businessman in a neighboring town. Yeah, some people call chitterlings and hog mawls Slave Food, cuz those were the parts of the 🐷 pig the slave owners discarded. But the resourceful enslaved people prepared them and made them a tasty cuisine that has lasted until today.

      I rather enjoyed them. They are however very labor intensive, and beyond the amount of work I am willing to consistently invest. Maybe I've just getting lazy in my old age. :-) Thanks!!

      RealUnitedStatesVlog... You are right. It takes some time to clean and prepare chitterlings--once a year is enough time I put into it. Once you clean and season them--I forgot to say that I also put vinegar in them too for tenderness then just bring them to a boil, cut the flame down and let them simmer. Some people cheat😉 and stretch the chitterlings and put hog mawls in them. Once cooked--about 4 hrs-- people cut them up together and serve them. You can fry the chitterlings or barbecue them, too. Chitterlings and hog mawls are really good if prepared correctly. My Muslim brothers sell those bean pies--I think they are made from White Beans. It is a custard type pie-- I think they are made like pumpkin or sweet potato custard pies. Look on youtube. Well I said enough. Glad you enjoyed some southern cooking. Take care, friend.👍😁

    Just came across this video! Way to go!!! I grew up in Maryland and my sister who still lives there told me she went to Lexington market rather than make her own this Thsnksgiving. They are so good and clean there.You have to be honest about the smell which some just can't get past to eat them! I agree a light sprinkle of vinegar, salt pepper and franks hot sauce is the best. Most have then with corn bread and fresh collards but in the south they eat them for breakfast with grits! Yum! Once you eat them you will find yourself craving for more! Thanks for sharing!

    They are also good fried and after u boil them u can also bake them with green bell peppers and onions with a splash of olive oil and some seasoning it’s Delicious 😋

    This is a fantastic video guys. I'm from Baltimore and have been going to Lexington market for years. They've taken a big hit with the covid scamdemic and are operating at about 40% capacity last time I was there. Big remodeling plans were on the horizon before the crisis. We'll have to see how it all plays out, but best of luck to the vendors.

    Was that 2 Cholula bottles out of the 4 pack? Amongst what I imported from the States we liked it best. The Sabrozita variety is also good second best to Cholula to my taste.

      Mikle Rosswell Good catch!! That is indeed Cholula, the small one regular and the larger one chipotle. This is far and away my favorite hot sauce. I prefer the original.       The Sabrozita variety is less rich in taste but we managed to use it as dips to grill everything from fish to pork. If you make it stay on food while cooking it's sure worth a try. It is way hotter than Cholula too.
      I recall from the Quantum Leap series episode food made of broiled pork intestines originated from the black culture. Is that so?

    I grew up in Baldwin County in Alabama, I love soul food and I love a little chicken liver to make dirty rice. I have no doubt what they are eating is delicious and I am not a picky eater. I love trying new things but I would have to give this some serious thought before I tried this.

      LOL! Well, I found it to taste largely like pork, and it tasted good. It's harder for most people getting it past their psyche than it is their taste-buds.

    in Italy was once consumed much tripe! (it is not Pig intestines!)
    I have eaten tripe there earlier on the roads market, with lemon and salt (pre-cooked)
    my favorite are tripe alla Napoletana - done in south Italy with white wine and tomatoes garlic and much Parmesan cheese,
    By The Way.... Beef tripe is Usually made from only the first three chambers of a cow's stomach ;-)

      Eusepio1957 Hey, thanks Ettore. We have not yet tried beef tripe, but I suspect we will try it at the next opportunity we get. Actually, I have had a small amount of beef tripe once, in a Vietnamese dish called Pho. Although it is impossible to taste it individually in this dish. Greeting from USA! Paul

    When I first tasted them I thought they taste like bowel 🤷🏽‍♀️🤷🏽‍♀️However I have grown to desire them. I don’t know if there’s a difference in the way different people cleaned them because you know they always say you can’t eat anybody’s chitterlings i’m just saying🤷🏽‍♀️🤷🏽‍♀️🤷🏽‍♀️🤷🏽‍♀️🤷🏽‍♀️My children will not eat them however my husband and I love them. Just make sure you clean the fat off of the chitterlings really really good. boil them in 1 1/2 gallon of water through out cooking. After the grease float to the top of the water then rinse them under hot water . Pour off the first oily water rinsing well. And then proceed in cooking them by making sure you season your water and adding one big whole potato and onion to suck up the oil from the first rinse and boil. Discard both the potato, onions after one hours of cooking. Extra carrots, salary, potatoes 🥔 whatever you want can be added to the pot for final cooking and thickening the sauce Don’t forget to add more water to the pot after the first rinse the chitterlings should be covered 1 1/2 inch of water above the chitterlings. Cook on simmer until fork tender and there you go you have some delicious mouth watering chitterlings🤗🤗🤗🤗🤗🤗🤗

      Well, I will admit they have a unique taste the first time you experience them, and it's best not to dwell too much on their function. That could be said of several foods I suppose though. I personally enjoyed them well enough.

    I subscribed because that demonstrates no hypocrisy on your part for even researching and giving a taste. For me, it was a taste I never acquired to this day!! And, I'm a proud Black conservative. I just don't like them. My brother is 'mixed'. He celebrates the Holidays eating them... He was offended when I said, "Naw, I'm good." Maybe, I'll try 'em again in my late years this Christmas with him... I just have to get mentally prepared.

      Thanks so much, and welcome! I try and let my taste buds make their own decision. :-) When I think about how much my taste for things has changed since I was a child, it really blows my mind! And the older I get, the wider my range of taste has gotten. Although admittedly there are a couple of things, like sweet potatoes, that I will never develop a taste for . . . unless they are made into a pie of course. Pie makes everything better. :-)

    Nope. I grew up eating them. I’m almost 50 and 2007 was the best chitlins I had . And it was the last time I ate chitlins. No matter how they were cleaned that taste is there. But hog maws are delicious. My tastebuds different.

      You can buy chittlins already cleaned in some stores and u just wash them off and boil them for about 2 hours or so. And add vinegar and hot sauce in the water while they cook. But to fry them they are usually boiled first. I think u will enjoy it Lol. And since you have had hog maws also next you can try sliced hog jowls. Fry it and tastes a lot like bacon but in my opinion much better

      Greg Winstead -- Please tell me that you do more than just rinsing them off. They have to be inspected thoroughly, each one both sides,, scrubbed, picked and rinsed under a stream of water. Hot water works best as it seems to help strip the inner membrane easily along with stuff you don't want. :-) That said, I LOVE em anyway. I'd love to try them fried. Maybe this year, I'll separate some to fry. Any tips? 😁

    chitterlings tastes like chicken to me, but doesn't smell like chicken.

      +Next Qveen Hey thanks! I thought they taste more like pork, but I suppose it is largely dependent on how the individual cook seasons them. Either way, I really enjoyed them.

    Pig intestines!,,,, i would definitively never ever eat that.... i never mention this online but i'm very picky with food.

    All I can think of is the taste of menudo. Yuck! Veggies look good.

      Well, I suppose it all depends on the amount of work and care that go into the preparation and cooking. In this case the cook was meticulous about everything, and there weren't any unpleasant aftertastes.
