    Put a pinch of turmeric for nice gold colour and a pinch of blk ppr if you want a anti-inflammatory benefits of turmeric.

    That's the best way indeed. Rather than adding lemon juice, I use a bit of citric acid. I also use my vacuum sealer for Ball jars to get a little more life in the fridge.

    I made this today for the first time ( today ) exactly as he made it, and this is the first time EVER, I have had Mayonnaise turn out!!!!!! ( and on the first try ). It was a little bland for me so I just added what I liked to season it ( what do you expect when you take all the crap out of it and make it from scratch with amazing ingredients .!!!!!).
    .However, this is real Mao made with My organic egg from my chickens and amazing Avocado Oil...The texture is spot on, and you really do make this in 30 sec or less...Amazing is a understatement. I am excited to try his other recipes...WOW, Just WOW...
    This recipe opens up a world of foods I like, I just love Mayonnaise and always felt deprived. With Keto, I have never had the option of Condiments other than Ketchup. So this is HUGE to me! Thank you Joe!

    🎆This is MAGIC! Thank you, what a game changer. I even bought the immersion blender and the oil. I had the best mayonnaise I have ever tasted. The first time I didn't follow your directions I was in a hurry. The next time I did everything including warm temperature egg. This method she beats dipping oil drop by drop. Who knew Mayonnaise could be so fun to make.?

    I wonder whether those for whom this technique failed were blending the egg sufficiently before slowly raising the blender to incorporate the oil. It’s imperative to have the immersion blender resting on the bottom of the container, enclosing the egg. Turn on the blender, keeping it at the bottom of the jar for a few seconds. Don’t lift or tilt immediately.

      What’s great about making it yourself is you can get away from those unhealthy oils and instead use healthy oils like olive oil and avocado oil.

      Experiment with flavors (as long as keto-friendly!). Sirachi or minced fresh herbs or (fill in the blank). I love garlic so I'd be tempted to use fresh minced garlic, fortified with garlic powder LOL 😋🧄🧄🧄🧄

      Put more lemon juice. Not too much or it will turn out runny.

    I have to tell you guys this too. I ate some of mt DELISH Mayo as with some Pork rinds and had some guac as well for a snack about a hour ago. I just took my Blood reading for Glucose and for Ketosis level and my Blood sugars were still low ) 83 and my Ketosis level was 1.6 ( AWESOME ) this has me in a HIGH GKI for Ketosis...How awesome is that! Again, just WOW....

      Yes, add the powder of one probiotic capsule when making the mayo. Put the mayo in the jar you are going to keep it in and cover it loosely. Leave on the counter top (not in fridge) for 8 hours. After this time, firmly close the jar and keep it in the fridge. Use as normal. I make it this way all the time and I’ve never had any problems with it. The mayo keeps for at least two months like this. I know it sounds a little scary, I was very skeptic at first but it really does work. In the summer when it gets hot, I make my mayo just before going to bed so it’s not too hot in my appartement. (I don’t have air conditioning). Again no problems with my mayo.

      Longer? Then you will need to buy industrial mayo. Just find one that you are happy with but I think even with this kind often the manufacturers say to eat within a month after opening. Other than that, stock up on the ingredients and get some chickens! 😘

      You could always try this...either pasturized liquid eggs or google says this: "The U.S. Department of Agriculture (USDA) considers it safe to use in-shell raw eggs if they are pasteurized. Raw eggs may contain a type of pathogenic bacteria called Salmonella, which can cause food poisoning. Using pasteurized eggs lessens the possibility of contracting a Salmonella infection."

      Pasturizing the egg would be best, and the mayo would also last longer.
      This is a good recipe for sure, but you might want to look up Steve at his "Serious Keto" channel. He explains how to pasturize your eggs and has two recipe options, one with olive oil and one with avocado oil.

    Been making mayo this way for years. I used to many many years ago make it using dribble of oil in the fats in a food processor but it was always a hit or miss. Once I learned how to do this .. I was sold.
    It never fails..
    Oh. And eggs kept in the fridge.. here in New Zealand it's not as commen as keeping the eggs out. I wonder ifbthats because we are a temperate climate

      Hi, if eggs are fresh they can be left out, here in America they are transported over long distances and kept quite a bit longer so have to be refrigerated and kept refrigerated. When I had my own chickens I never refrigerated them.

      If you don’t wash your eggs they will keep longer not refrigerated b/c the chicken coats them with a clear substance that preserves them as she lays them. Just brush them off. If the egg floats in water discard it.

      Ok so after searching on the internet for an hour, I found the solution. I whisked 1 cold egg yolk in a separate bowl using a hand whisk and slowly drizzled in my liquid mayo mix while whisking vigorously. My arms are about to fall off but at least I got thick mayo. 😅

    I tried it and couldn't get my mix to gel. 2 egg yokes... 8 oz plain olive oil... 1 tsp dijon... 1 tsp fresh lemon juice... and a sprinkle of Himalayan salt... I tried a stick blender, then wisk in bowl, then mixer and I couldn't get it to gel. Any recommendations?

      I've made mayo in the past in my blender and also made it in a bowl with a hand-whisk. In both cases, it involved slowly drizzing the oil in. I bet one could use an electric hand mixer too! Whisking by hand took the most time LOL. Joe's method with the immersion blender is quick and easy as opposed to making mayo with other methods. Good luck!

      @@donnanordman1584 yes, just take the cooked yolk from the egg whites. You will have to use 2or 3. Just put in your jar like a raw egg and blend as usual. Adjust everything to your taste.

    Hmmm. Just did this, it came together instantly with a beautiful texture but it just tastes like oil. I even added more lemon, mustard and a second egg and it is blaaaaaaand. Eesh I should have tried with cheap oil! What could have gone wrong?

      It's all about the oil you choose. I use grape seed oil or peanut oil because they don't taste as strong as other oils like olive and avocado oils.

      Not sure if you figured it out but just did this with ingredients on the mayo jar. Used one egg to one cup of vegetable oil & added vinegar salt sugar lemon juice concentrate & it’s perfect.

      It shouldn’t be made with olive oil. Any light neutral vegetable oil should be used. I’ve been making mayonnaise using this method for more than 30 yrs. I start by putting in the egg & then the other ingredients. Oil last. Leave a few minutes for all the ingredients to settle and then put your blender in gently right to the bottom of the jar and start blending. The secret is not to move the blender stick around in the jar until emulsification starts. Only then should the blender be moved around the jar to incorporate the rest of the oil. Works every time.

      I agree, it’s very better and taste horrible! I tried it twice. I threw out both batches. My husband just left to go buy a new jar Dukes. Some things you just don’t compromise on. Coffee, Oreos, grape jelly, and mayonnaise!

      Make with sunflower seed oil or avocado oil,them both don't have any taste. Avocado oil is more nutritious but more expensive as well

    One cup 250 ml of room temp avocado oil

      This happened to me as well. I tried again and it worked! I was bummed to have wasted a cup of good oil but I had to give it another try as I was determined to make it work! This was my first time using an immersion blender, and I think what I did wrong the first time was I left the blender flat on the bottom of the jar for too long so it wasn’t blending properly. (It was almost suctioned to the bottom of the jar and not blending as fast) You have to tilt it a bit. So the second time after putting the blender on the yolk I immediately tilted it, then pulled up, and this worked perfectly for me. Maybe it was the same for you? Try it again! It turned out perfectly the second time and was so yummy!

    recipe is common, some people use mustard powder instead of Dijon. This is a typical recipe nothing out of the ordinary unless...you add......go ahead tell us what you add to yours for a better flavor?

      You can easily pasteurize your own eggs or simply buy pasteurized eggs.

    Anyone think you could still eat Mayo at 2 weeks in fridge and not die or hurl 😅??

      I've used it for up to a month in the fridge with absolutely no ill effects or change in taste.

      If you pasteurize your eggs or buy pasteurized eggs the mayonnaise will last a month or longer.
