  • This mango pie comes from Samin Nosrat, so you know it's perfect. It uses Alphonso mangos, which have a stronger and more vibrant flavor. It's tangy, creamy and sweet. Just what you need this summer. Get the recipe: nyti.ms/2IIwdtk

    I made it. It was not easy -- so many steps. But it is totally delicious. FWIW, you can skip the addition of sugar to the cream -- it is sweet enough, as the mango puree I bought came pre-sweetened.

    I love mango and I will definitely try a variant of this with much much less sugar in it.
    Is it just me who is bothered by how inefficient is their cleanup (leaving the mango soaked beater on a cloth, leaving spoonfuls of crumbs and mango sauce in the big bowl)?

    why would you tap to get out air bubbles only to fold in whipped cream which is all about adding air bubbles

    • @tom_something
      @tom_something Před 5 lety +4

      The tapping generally gets rid of large air bubbles and doesn't do much for the strong ones.
      I found the folding technique a little surprising though. What I typically see is that a third of the fluffy stuff is added to all of the non-fluffy stuff. The two are mixed together with little car for the air bubbles, as this is just an introductory "lightening" addition. Then the remainder of the fluffy stuff is added, and the two are carefully combined. I can't help wondering if the deviation from the practice could have contributed to the pie looking a little bit crust-forward by the end.

    Question, is this chilled in the freezer or the regular fridge?

    • @lonelywhale3337
      @lonelywhale3337 Před 3 lety

      Super late answer here
      The fridge!
      If you put it in the freezer it's gonna well.. freeze, and not only will it be tough to cut and eat, some of the flavor will go away

      @srishtipillutla4063 Před 3 lety +4

      I swapped the cream cheese and heavy cream for 2 cans of coconut milk (only used the fatty part and not the watery portion) it still turned out great and set well!

      This can looked like Alphonso mangoes purée. You can get it in Indian stores.

    • @marafichios5471

      Or you could make the puree yourself. Just add mango to a blender and you re done, its even better and healthier.

      Samin and Hrishi (whose mother created this recipe) talked about this on their podcast, Home Cooking, in one of their Thanksgiving episodes - yes, you can, at a 1:1 ratio I believe!
