Wagyu Sirloin or Filet Steak? - Tokyo - Japanese Teppanyaki

  • Both steak cuts have a marbling level of A5 (highest score). A5 Filet steak is usually less marbled than A5 Sirloin or Ribeye Steak. While Filet Steak is gentle, tender and beefy, other A5 steak cuts require more care during the preparation: becomes the internal temperature too high, the steak becomes unpleasantly soft, greasy, mushy.
    The Filet Steak goes for 16,000 Yen (141 USD) /100g, the Yonezawa Sirloin Steak for 15,000 Yen (132 USD) /100g. 10% service charged are added. The weight of the Filet Steak in the video is 120g.

    Best Teppanyaki video I've seen. No unneeded seasonings or sauces. No hitting the spatulas together every 2 seconds like some kind of knife thrower. They didn't cut the meat as it was cooking and let all the juices run out. And after cooking it they RESTED THE GODDAMN STEAK. Teppanyaki usually ends up being more about the gimmicks and the experience of it than the actual food, but they did everything perfectly here. Very impressive.

      "resting the steak" is a gimmick. Ask a professional. If you want your steak overcooked like an idiot, then fine... but if you eat your steak the way it's supposed to be eaten, then "resting" it will cause it to be overdone in the center.

      @@I_leave_mean_comments Resting the steak is absolutely not a gimmick. When meat cooks, its juices gravitate to the center of the cut. If you allow the meat to stand away from heat before serving, you give it time to redistribute and reabsorb its juice. As a result, the meat loses less juice when you cut it, also making the meat more tender and juicy throughout. As for overcooking, how hard is it to remove the steak when it is 1 stage more pink than desired? Then, after resting, you have your perfect done-ness without a plate full of juice surrounding a dry steak.

    When I had Teppanyaki in Osaka at Keyaki teppan the rice at the end was my favourite haha. Had everything, wagyu, lobster, fois gras, scallops, but of all that, the rice was out of this world haha.

    If you don't have a 1000 degree broiler, this or a cast iron skillet is the next best method to use. The butter added makes all the difference in grilling a steak.

    I'm a retired engineer and I traveled to Japan on many occasions business and pleasure. I did enjoy the Wagyu many times in Japan, but base on own personal preference I still love and enjoy USDA prime, loved the meaty prime soft Grade A American beef. Wagyu is great and famous but is too much fat and can only be enjoyed in a small amount. When I ate wood charred American Prime, you know you had the world best steak that satisfied and hit the spot

      Hahahah Look up the stats. More Asian restaurants are shut down or fined by inspection officers than any other type. In Canada 80% of all restaurant violations were issued to Asian restaurants.

    Well as someone who eats alot of Japanese. They don't use filet, they use the sirloin and call it filet. So wagyu but even then there is american wagyu and Japanese wagyu. So no matter which they shortcut for cost saving and deeply exaggerate names

      im sure yours tastes better because less theatrics/circus performance, good meat holds it's own and doesn't need kata precision to taste good, given so much attention and energy a Hebrew national hot dog will be mouth watering also.

    What the hell are they doing to that gorgeous piece of beef? How dare you not grill that magnificent meat? I'm blown away. This meat requires a grill with brick charcoal.

    I've had this beef one time and I could eat this raw
