How to Cook Lima Beans

  • www.southernfrugal.com Lima beans have 7-8 grams of protein per 1/4 cup of dried beans. If you eat a cup of cooked beans it would certainly equal the protein in a meat product. They are loaded with many nutrients and lots of fiber. So very healthy.

    Thank you for watching my video on lima beans. I just pick off the skins that come lose on their own and leave the rest. Cooking them on just simmer should keep the skins on otherwise you'll just have a cream type soup.
    Remember the package the beans come in says to cook them on low, usually. I love lima beans they are my favorite dried bean and have as much protein as peanut butter. Hope this helps, Phyllis

    Thanks so much for this simple recipe. My mom used to cook these Lima Beans, she called them "Butter Beans" when I was a child and I loved them so much. Recently I was looking for a way to cook them without the meat she used to use. I've cooked them many times and jazzed them up with onion, garlic, seasoning salt, Mrs Dash etc only to not like them that way. The other day I threw some Butter Beans in a crock pot and added a dash of seasoning salt. I loved them! It seems for me, this bean tastes better when it is cooked in a simple manner.

    Very good method and well done. My Bigmama would add a pinch of baking soda like you did, help with gas, but now I realize it was for softening, too. My grandparents and parents grew up poor in the south. But they ate very good dishes. We ate the limas OVER rice, plenty of gravy and a great side dish ! Thanks.

    Thank you Miss Phyllis. I have been trying to figure out how to cook the beans without having so much gas on them. I love all beans .. at least all the ones I've tried. I grew up with my grandparents and I grew up on beans , taters, cornbread etc. I'm gonna get back to eating like that. God bless you and your family.

    Really liked your comment. If you only knew how much I missed eating fried fatback with these lima beans. I can taste it now sooooo good. If I ate like that now I would be as big as the side of the barn. You really do get use to not using meat to season vegetables. It was really hard to make the switch to more healthy seasoning, we made that switch about 20 years ago but I still would love to have a piece of fried fatback inside a hot biscuit.     Thank you Phyllis! I am comfortable cooking other dried beans, but I ran into an issue with Lima beans busting open and wrinkling when I soaked them overnight. Thank you for the baking soda and double rinsing tip. I'm about to try your method.

    great tip! baking soda! wow!never knew that! my pinto beans never got cooked soft.but then i had salted it first! quick boil method,that i did not know either.I was told i have to pre soak dried beans overnite.I fairhfully followed that with my pinto beans still was not soft.Will baking soda work on any dried beans maam? I love lima beans.I was buying frozen ones.Now i will try dried ones.They look so creamy.Thankyou maam for showing us how to cook dried bean.

      Right now I can't think what I meant by biscuit bread other than using the dough spread out on a pizza pan and baked all in one piece.

    Trying your way Phyllis >>>>While my lima's were soaking/simmering after the 2 minute boil ....in another pot on medium I cooked in water ....sliced carrots, onion, celery and diced ham. I also added large pieces of Ham Salt back for flavoring ....so good!!! Question, do you have to rinse limas after the second simmering to get the baking soda out!! Tonight, I suppose I will rinse limas again ....and then add the above veggies and the broth (removed Salt back pieces). I plan to simmer all for another hour until limas really soften and make a little bean gravy!

      The baking soda stays in the water, no need to rinse the beans after the second simmering.

    I'm finding that if I soak the dried beans (peas, rice, any other dried agricultural product) overnight or for a day, rinse them, then boil them on high heat for about an hour they cook in about an hour.

    dos it hurt if you can soak them the night before? i was awalys told you have to soak beans the night before. i was just not to sure if you could.

    I live in Cambodia and I found Australian lima beans in a supermarket and I decided to buy them. I soaked them overnight (maybe too long) but the peel started to come off by itself. Is that normal? I'm going to boil them next and then cook them with onions and potatoes...

      The peeling or shell does tend to come off the large Lima beans. I actually like it when some of the shells come off because it gives the beans a lot of thickness. Some of the shells are going to always come off so no problem. You do have to be careful and watch the beans when cooking them because they can burn on the bottom of the pot because of the thickness. Those shells that come off can be picked out and thrown away.

      I think they are all in the lima bean family. Here in the South we call small green lima beans - butter beans, we also have speckled butter beans (my personal favorite if they are cooked fresh).

    There's a newer video you made on how to cook pinto beans where you boiled and rinsed them three times before you cooked them. Should I do that for lima beans? I've found a warning online about lima beans beans being toxic if they're not cooked correctly and different instructions on how to cook them and confused now how to cook them. LOL

      I only use the 3 boil technique on pinto beans, we don't seem to have a problem with any other type beans. I boil the Lima beans then let them sit in the water for about an hour, pour off that water and use fresh water to boil till tender. Can't imagine Lima beans being toxic in anyway.

    I THOUGHT U ARE SUPPOSED TO SOAK YOUR DRIED BEANS THE NIGHT B4....SO IS THAT JUST AB OPTION. BCUZ I HAVE TURKEY WINGS IN MY CROCKPOT NOW THEN DECIDED I WANTED BEANS AND JUST STARTED SOAKING THEM.     yes I love this recipe for all natural lima beans, but canola oil?!? I Hate canada oil unless im frying something that needs to get really hot, like fried chicken or french fries. I always use olive, peanut or hollywood oil to eat .

      sythlorde canola oil/vegetable/soybean oil is very bad for your health...please give it up. Use coconut oil, palm oil, organic lard/tallow (in some case olive oil if you are cooking at low heat). Eat like your mom and grandma use to eat! Remember there were no fat people in the 1920's 30's... Obesity and heart attacks started after corporations begin to use soybean oil/vegetable oil rather than coconut oil and lard.

      I have never been able to turn Mr. Bucky into a vegetarian and heaven knows I have sure tried.
      We compromised and eat vegan a couple days a week now, the rest of the time he's got to have his meat. He only gets 4 ounces of meat or animal protein per day the rest of the time.
