- Easy lima bean soup with dried beans is not only easy, but it's delicious, and healthy. It's so satisfying, you can use it as an entire meal. A nice large bowl with a piece of crusty bread. Oh Yeah!
Ingredients:
1/2 pound dried lima beans 1 stalk celery
2 cups water for soaking 1 can diced tomato
4 cups vegetable broth 1/2 tsp dried oregano
3 cloves garlic 1 bayleaf
1/2 large green pepper 2 tsp Worcestershire sauce
1 small onion
1 medium carrot

I made this soup for New Year's Day dinner. It was a hit. I did add rice and veggie bullion and I omitted the Worcester . And now it's truly vegan.

Yeah! Soaking the beans is a big time saver. It also means you need to plan to make the soup in advance. However, this is a wonderful soup, Enjoy!👍

Okay! So the beginning of this video was a little different, but I’m glad that I watched it. I followed your recipe but in lieu of using Worchester sauce I used smoked paprika and a little more garlic. It turned out fabulous. Thanks for sharing.

👍You can use green pepper instead of red pepper. Some people get heartburn from green peppers, so I opted for the red. You can use either.😁
Lima bean soup doesn't need all that unnecessary seasoning! It kills the TASTE.
Lima beans are a starch, and starch sucks up flavor. That's why, for example, salting the boiling water before cooking pasta is necessary, and aggressively seasoning any bean soup is my preference. Thank You for the comment. I can tell you are an excellent cook, and I appreciate the comment.👍
@@chefdanalmostvegan My grandmother flavored them with FATBACK or BUTT meat GREASE! So did the other SOUTHERN GRANNIES! Tasted fine too us.
👍👍I love that. That is some good cookin' there. My concern is that this is an "Almost" vegan channel, so I need to substitute for the meat-based fat. Let me know if you have any other substitutions I may use. Sometimes I miss using fatback, it's an awesome ingredient. Thanks for the reply.
