    Browning the pork until all the "Juice" has dried is called building a "Fond" and adding the chicken broth and salsa verde "Deglazes" the fond into the sauce. Yummy. Thickery, would be to reduce or make a reduction. Thumbs Up!

    Try roasting the cuts of pork in the oven instead on a sheetpan for quicker and golden brown results

    don't crowd the pan. that's why you get the meat releasing water like that.

    Did I hear THICKERY? 😅 OK, I'm always afraid to let the meat reduce and cook out the juice because I don't want to overcook. Sometimes I pour out the juice let it brown and then add the juice back, the chile verde.

      The pork needs to cook in its juices until it browns. Then the broth and green sauce are added.

      In this recipe, the pork should be cooked in its juices until browned, but this takes time. It is worth waiting the necessary time for the juices to be consumed.

      I made the salsa verde and stored it in an old spaghetti jar. lol.
