EASY ONE POT CHILE VERDE RECIPE | no fresh tomatillos required |

- This Chile Verde recipe is amazingly delicious, super easy, flexible, and convenient to make with ingredients you have on hand. I don't often have fresh tomatillos, so I use a simple substitute instead. This one pot make ahead dish is light on work, but full of bold flavor, and ultra tender pork.
Ingredients:
3 green peppers (1 poblano, 1 anaheim, 1 bell), chopped
1 large yellow onion, chopped
3 lb boneless pork, cubed
black pepper, garlic powder, and an all purpose seasoning such as Tony's Creole or Slap Ya Mama
1/2 cup all purpose flour
2 tsp minced garlic
2 cups water
28 oz can mild green enchilada sauce
7.7 oz can salsa verde
1/2 tsp dried cilantro
1 1/2 tsp Mexican oregano
a couple dashes paprika
2 tsp chicken bouillon
2 heaping Tbsp maseca + 1/2 cup water (stir together to make slurry)
Season meat with pepper, garlic powder, and all purpose seasoning, and coat with flour in a large bowl. Brown meat in large pot over high heat in a bit of oil or bacon grease. Work in 2 batches. Remove browned meat from pot and set aside. Return pot to stove and add onion and peppers, cooking until they begin to brown and onions are translucent. Add garlic, stir and continue cooking 1 minute longer, until garlic is fragrant. Return meat to pot and add remaining ingredients except maseca slurry. Cover and cook on low heat for 1 hour. Stir in maseca slurry, then continue cooking 30 more minutes, covered. Uncover and let cook an additional 30 minutes or until sauce reaches desired consistency.

This has been my go to Chile Verde recipe since I discovered it. I only like mine hotter and use dried red chili peppers with seeds. But that's just personal tastes. I lived in New Mexico, love it there, and when I get homesick for New Mexico, I put on your recipe, make my own tortillas, a couple cervezas--heaven!!

I dont usually look for recipes because my grandmother taught me how to cook but wanted to try it with the cans. I just made it and it was delicious. I added some cumin to mine and the masa was perfect. I'll be making it like this for now on. Thank you for such a good recipe.

I sometimes use the trimming I have left from my pork spareribs. It's usually enough for two. I also add a bay leaf or two to the sauce.

I tried it and it's INCREDIBLE! It's the real thing! The only changes I made were substituting 1 can of chicken broth instead of the water, 1 TBS of chicken slop instead of 2 and adding 1 TSP Cumin with the dry spices when preparing the mixture for the pork. Other than that, I stuck to your recipe. The maseca added a nice finish to it! Thanks for putting this video together! It's absolutely delicious!
[A suggestion for future videos: Please use different music. That repetitive junk drove me nuts after 30 seconds. I had to turn the volume down to avoid it. Perhaps some happy Tejano music in the background for your next vids]

NICE! That is pretty much the recipe that a coworker gave me years (and years) ago! I never liked the tomatillos in Green Chile. They are too tart for me. I normally buy the canned or frozen green chiles and add some fresh jalapenos to the mix. You nailed it with the meat, flour and seasonings! I never tried the Country Style Rib meat. I always used Pork Roast but what you used is much cheaper.
I get the tomatillos to make what is like Fried Green Tomatoes. Same texture and nearly the same taste. Thanks for sharing.

A pork tenderloin is the ideal cut to make chili verde. If other cuts are not simmered long enough, they chew like boiled rubber bands.

The secret is using a pressure cooker. I use an Instant Pot I got as a Christmas Present from one of my daughters over a decade ago. Uber tough and "cheap" cuts turn all that toughness into flavorful gravy. In truth, a cheaper pork roast will turn out far better than an expensive cut that lacks the fat and cartilage that a pressure cooker melts into flavorful gravy.

Tried this out with pork stew meat. Since I can't tolerate fat, I only used the lean portions. Then I used one large can of roasted green chiles, one half can of hatch green enchilada sauce, some cumin and garlic and used chicken broth instead of water and went from there. Turned out great.

At the end it is showed with our homemade Mexican rice, some doctored up rosarita refried beans (we add water, chicken bouillon and garlic powder), and a warm flour tortilla (we usually get las Palmas or Guerrero brand). Thanks for watching!

You can use chicken instead of pork also. It’s kind of hard to tell it’s not pork.
I watched this video yesterday and just kept nodding my head - this is almost exactly the way I've made chile verde for years! It's so good and so easy and can be made any time with pantry items. I use a larger jar of tomatillo salsa but otherwise very close. One comment - I nearly quit watching because the repetitive nature of the soundtrack you were using was about to drive me nuts and I didn't want to turn off the volume because I wanted to hear what you were saying. Glad I kept at it though, now I want to make some! Thanks!

This recipe is exactly what I've been looking for and I can't wait to try it!! Your awesome but the music is not good I would recommend Beethoven or motzart if you have to have music because it's calming and relaxing 🎵🎶 (As I've seen in comments over the past those hard of hearing won't watch because they can't hear you over the music so lower volume music just a suggestion)

When I make chili verde, I use New Mexican Hatch 505 chili that already has the green chilis and tomatillos.

You said you dont often have fresh tomatillos on hand.... I Love tomatillos....would I 'chop them up' along with the other peppers, then saute, or blacken the skin first?

Very nice recipe and just what I needed for some pork I had. I think adding some pork belly and potatoes would be real nice too.
The music was grating on the ears. No cooking channel should have music, it ruined the video. Never put music on any cooking, demo, DIY, tour, or wildlife video. Silence and natural sounds are golden.
Try adding a dash (1/4 to 1/2 teaspoon) of cinnamon, it adds a nice background flavor

I like to put this over a couple of broken up tostada shells in a bowl. Let the shell pieces get soggy, and enjoy. Tortilla chips will work too, if that's what you have. Tostada shells are just a bit thicker, toothier and have a great corn taste; which is how I like it.

I roast my peppers under the broiler until slightly blackened and the fresh tomatillos also when I can get them. I brown the meat in a large skillet (on the grille burner to keep the stove clean) and I put everything in a crockpot for 8 hours...
When I use a canned salsa I look for a medium heat salsa verde, and I like using the La Victoria roasted salsa verde. Careful with salt when using canned products as they have salt in them...

Absolutely, I just generally have bouillon on hand far more often than chicken stock, mostly because I hate opening a carton of stock, then wasting 1/2 of it. But of course use whichever you prefer!

I followed your recipe and did all the browning and sautéing in the instant pot and then put the lid on and pressure cooked it for 30 mins. I didn’t have any Manseca, so I used some xanthan gum to thicken it up. I also added some cumin and I used a whole jar of salsa verde salsa and then added 1 cup of water instead of two (because I used the whole jar of salsa). Thanks for sharing!

When I need to flour coat some meat, I put some flour and the meat into a paper or plastic bag. Then , give the bag a good shaking. Now you can take the coated meat out and it is all evenly coated and there is no mess to clean up, just toss the bag.

My pet pieve is it is callled Chile Verde for a reason, it is not Tomatillo Verde, and yet a lot of recipes call for Tomatillos.
