SIMPLE Gateaux Coco | Mauritian Coconut cake

    RECIPE:
    Coconut
    350 ml Water
    260g Sugar
    1 tsp Vanilla Extract
    Food Colouring
    DIRECTIONS:
    1. Grate a fresh coconut into fine pieces.
    2. Add the water and sugar to a small saucepan to create a syrup.
    3. When the mixture has thickened, add you’re the coconut and mix well until all the coconut is coated in the sugar syrup.
    4. Add the vanilla extract and the food colouring
    5. Mix well and cook for a bit until the sugar syrup has dried and the coconut has absorbed the syrup.
    6. Once cooled, using wet hands make little oval shaped balls
    7. Place onto a tray or plate to dry and set.
