- This is a traditional South Indian pickle made from kadarangai or wild lemon
Simple and easy to make , it aids digestion too
Ingredients
Kadarangai/wild lemon 1 large
Crystal salt 2 Tbsp
Turmeric powder 1/2 tsp
Mustard seeds 1 tsp+1/2 tsp
Methi seeds1/2 tsp
Hing cubes 2-3
Dry red chillis 7
Til/Sesame oil 1/4 cup
Kashmiri chilli powder 1 tsp

It looks like a citrus fruit called darunj in Himachal...not very sour in taste .we make a very different recipe from it.we peel its skin then cut into small pieces. On other hand v make thick nd coarse paste of fresh coriander leaves, very few palak leaves nd mustard leaves, sesame seeds, salt,jaggery,green chillies .then mix everything together .this chutney nd citrus fruit.then in last v give smoky taste by giving dhuni of burning coal nd ghee.......its super delicious nd super healthy...

Yes and yes you can store on countertop , however I prefer to alwaysstoremy pickle in the fridge for longer shelflife

Good question ! In some States of India , all salt seems to be iodised .

yes , but its ok now
For a change Maami can try without the spicy powder. Cut the 'K(i)darangai into small pieces along with fresh green chillies and tender ginger in finger size and add only salt. Keep for one day and store in old type empty Horlicks bottle.
