      Tuna doesn't have regular fish scales as we know it. It has "skin", same as for example, sharks or other big deep marine fishes. That's why it's much easier to clean it from its skin even when it's not frozen and fresh. Just with big very sharp knife.

      We must freeze and retain them at -40 F. When they trim the tail end off and put it in water, the way it swells will tell the story. Also, they must be frozen with the spines straight so as not to waste any of the four loins you cut out. This all affects our landing price.

      @@ConvairDart106 it’s all liquid nitrogen right? I met a guy on a job site who used to be in charge of shipping them in containers from I think the west coast of US. It’s like over $1m a container 😅

      most of the tuna in japan are imported from from south east asian countries so you dont need to thank them cause they are making it more expensive for your countries

      No respect for Japan here. Japan just imports most of its Tuna from other nearby regions countries, even Russia, produces all variety of products with it and because that it's just from Japan and not those other countries the cost of those products skyrockets for your market and for your wallet.

      In Japan fresh big cut of tuna can cost more than 1000$ in some fancy restaurants up there! What is cheap are left overs from those big pieces.

    Fascinating video. I would NOT want to be the guy who has to use that band saw to cut up the large, frozen tuna though. No safety guards and one slip and you could lose your hand. During a long day it would be too east to become complacent. Nope.

    For me a lot of the fish is being wasted I'm from the Caribbean the only thing throwing away is the gills and scales 😀

      to lose a whole hand (palm + a set of 5 fingers) at once will happen only if the worker is really not concentrated at his work. for example: if he suddenly has a whim to dance there like a ballerina with both his arms stretched to the sides.
      Yet to lose a finger or more while slicing can be dangerously expected 🤢🤭

      Cuts are going on grounded "meat" that you saw here. Cuts with bones usually are dried, made into powder and used as fertilizers or animal additional nutriens in animal food.

      Here you saw just a minor size Tunas. Not fully grown up. Grown up huge Tunas can be up to 2 meters long and scale up to more than 70-100+ kg. Those tunas are considered as "elite" product and can cost more than 500$ for 1kg. It's sold to elite and very expensive restaurants around the world. In Japan those prices rich even higher.
