Stuffed Poblano Peppers 3/11/22

  • This week we're making stuffed poblano peppers! Here's the recipe:
    Stuffed Poblanos
    EQUIPMENT:
    Frying Pan Scissors
    Wooden Spoon Oven Mitt
    Little spoon Kitchen Towel
    Baking Sheet Foil
    INGREDIENTS:
    8 ounces ground beef
    ½ C. Cooked Rice
    ½ C. Salsa
    2 T. Extra Virgin Olive Oil (EVOO)
    1 heaping teaspoon Oregano
    1 Cup Cheese
    ¼ tsp. black pepper, more to taste if needed
    ½ tsp. salt, more to taste if needed
    1 T. Minced Garlic
    ½ Yellow Onion
    1 Ounce Chipotle Pepper in Adobo Sauce
    4 Poblano Halves
    1 T. Tomato Paste
    INSTRUCTIONS:
    1. Preheat oven to 400 degrees.
    2. Scoop out the ribs and seeds from the poblano with a small spoon. Once cleaned, place poblano halves face up on baking sheet and set aside. You may want line the pan with to help keep it cleaner.
    3. Heat EVOO in frying pan over medium high heat.
    4. When oil is hot, place ground beef in frying pan and break apart with your spoon. Season with generous pinches of salt and pepper. Cook for 5 minutes or until there in no longer any visible pink, occasionally stirring and breaking up beef further.
    5. Add onions, garlic and oregano and cook until onions are translucent (about another 2 minutes).
    6. Add chipotles and tomato paste, stir to coat the meat. Cook for about 1-2 more minutes. If you don’t like spicy you can always put in less chipotles!
    7. Add cooked rice, salsa, and half of the cheese. Stir to combine evenly, and immediately turn off heat.
    8. Use spoon to pack each of the poblano halves evenly with beef & rice mix. Try to divide mixture evenly between each poblano half so they will cook evenly.
    9. Cover poblanos with foil. Bake for 40 minutes.
    10. Remove tray with poblanos from the oven using oven mitts. Then, still using mitts, carefully remove foil by lifting it away from your face. BE CAREFUL! IT’S VERY HOT AND MAY RELEASE STEAM!
    11. Sprinkle the rest of the cheese over the poblanos. Put back in the oven and cook for about 10 minutes uncovered, until cheese is melted, bubbly and a little brown.
