    King Arthur Flour is a fairly common (in the US) flour that does not Brominate their flour.

      @@apinchofpatience Except for Sugar. Auto-Immune diseases are treated with Immune Suppressants, which Sugar, apparently, is.

      Sugar is also a great part of heart disease and cancer. Sugar is inflammatory and feeds cancer cells. It is one of the most addictive substances we encounter. Laboratory studies have been done with rats. Two separate groups. One given Sugar and the other given coccinellids. Electric plates on the cage floor. Rats must walk on the plates to get to the food. Experiment began with no Electric current and then increasing in strength strong enough to cause death. Rats were willing to die for Sugar. They were not willing to die for coccinellids. Sugar is in all processed foods. Hunger is the cells request for nutrients. Most people are eating foods with little to no nutrients. People get hungry and eat. Soon after the body says it needs more nutrients. The person is physically full and nutritionally starved. Constantly hungry and obese.

    Extremely well presented. Very informative. It is better here in Europe, but there is still limited access to grass fed cattle, so organic dairy products and meat are massively expensive. Sadly... It's the poorest people who have no choice and must eat the crap that the food companies are getting rich on.

      It is sad, the food/drug system is broken in too many ways to count and generally does the most harm to the poor and in need. I'm so blessed that I live in a spot where I can grow a lot of my own food and can afford to buy good food for my family. It is something my husband and I both prioritize and work hard to provide for our kids, but it takes willpower in a world full of easier and cheaper options for sure!

    Fantastic info, I totally agree with you- ive Celiac, from the effects of cancer...[6x cancer conqueror here] and yet i can have Einkorn all day long- I grind my own as well. Love it!
    We are growing a patch this year as well.
    I grew up on a dairy, we rairly were sick! Kefir is Fantastic as well, its healing my gut and the leaky gut...
    These 3 & 4 letter agencies arw not here to help us!! Look at their reccord!

      Einkorn is incredible! How fun to grow your own! If I remember right, yiur in Texas? Growing a bit of grain is something I've long considered but have yet to try 😀
      I'm also lucky enough to have grown up on raw milk, we had a family cow for many years and made yogurt and cheese, all the fun stuff! We are getting goat milk from one of my sisters right now but I'm thinking about venturing into dairy sheep in the next year or two.... we will see, not many in my area are doing dairy sheep, goats are much more popular but I really don't want to own goats! They are so much more disctructive 😂

      @@apinchofpatience oh sweet one,, I'm so glad this is the journey God put me on... very little is taken for granted in my life! Yes it was a hard battle, docs gave me a 6week toe tag on my 37th birthday... I just turned 61in November... the 16th was my 2nd Bday that God gave me twice!! While I still have many of the effects of treatments [not traditional medicine- they wouldn't treat me, I was too far gone 🤣🤣🤣- but God!]
      We've had to learn the old ways again, and sooo love it! My husband the city boy- had come a long way in the past 42 years of marriage to this country gal...
      We are in Texas- New York Texas- we have a small place right now, 3 acres, we have goats, sheep, chickens, dogs, cats, and a garden 1 greenhouse [and I'm building a comercial nursery- many Medicinal herbs, as well as studying to become a community herbalist- my doc actually sells my salves, as he loves then] a barn, well, and the like... we are tiny but mighty, at least in God's eyes!!
      How you preserve and make food and meat, is how I grew up... no freezers - a smokehouse, root cellar, and preserve meat, we grew everything!
      The Einkorn growing I'd an experiment, however just gonna try it!

    Great video. As an amateur expert nutritionist I hold my breath when a channel I follow takes a swing at what’s wrong with our diets. Usually they make really unimpressive and unhelpful claims (everyone loves to blame “processed” food without explaining what that means or why it’s bad), but this checked some important boxes that usually go overlooked.

I have always loved teaching and sharing the things i learn/know, when my girls were first born and I started staying home with them my husband encouraged me to start sharing my hobbies and all the health research I'd done for our own family online as a creative outlet! He said im into all kinds of stuff he had never seen anyone else do, so i should show other people too. And now my husband actually joined the team. He has been helping me film and edit, so my videos are way better than they were when I was doing it on my own, and it's something we get to do together once a week!     I did a sugar detox and the first sugar I had was whole milk yogurt with raspberries and it tasted like the most decadent ice cream I had ever eaten. So mind blowing!

    Whew, no thanks. Might have jumped in up until 9 months ago when I went to Keto/Carnivore. After 3 1/2 months later dropping 70 lbs, all my joint pain and inflammation gone. Years of nerve pain gone. Type II diabetes gone.
    No I think I'm happily going to stick to living on Ketones and the little glucose my liver makes for me as needed. No extra glucose needed from any kind of grains or inflammatory vegetables.

      That's wonderful! I'm so glad you found what works well for you and you are feeling great on keto/carnivore! I did carnivore for 2 months last year after I'd had meningitis in an effort to heal more quickly, I can't see myself sticking to it unless I had a health reason but I think it is an amazing option! I'm feeling really good on an animal based diet with little bits of properly prepared grains and veggies tho so I'm sticking with that for the foreseeable future myself 😀

      Awesome! A bit gun shy myself. After being away from the junk for a while I had a tomato from a friend one day a while back. Instantly had my leg swell up like a balloon with every joint I've got hurting I think. Sux, loved tomatoes all my life.
      I'll have some cabbage or broccoli now and then. Pickles and olives here and there. A few nuts I'll have with one of my roosters sometimes but that's about my limits.

      My whole family is pretty sensitive to nightshade but we love peppers so much so I have been trying to ferment salsas and hot sauces,, that does seem to help but we still just do it in moderation! It's wild how much we can learn if we just give our bodies the chance to tell us and actually listen and give them what they need! I'm seriously so happy for you 💗 sorry about the tomatoes, but you feel so good without them, It's worth it!

    I was a student at Purdue university when GMO foods were being introduced and I took a science reporting class. My assignment was to attend a press conference of three attendees. Two were proponents of GMO and one was against. It was clearly slanted and misinformation from the GMO side. This also the same time that Starlink corn "escaped" into the corn market.

      Order the book Nourishing Traditions. Not so much for recipes, but for the sidebar notes. Information like antifreeze in ice-cream. The recipes are good too. The fermented catsup is the best.

    Really loved your informative video and was helpful to encourage some of my family to make better food choices. In Australia there is a dairy company doing something called cold pressed milk that has been approved by the food administrator government control people for being safe and fit for sale. This uses pressure instead of pasteurization to kill the bacteria. They are saying that it keeps all the nutrients and enzymes intact. I purchased some, twice the price of the best milks at AU$10 / 2 liters (US$6.50) which was crazy dear, but wanted to support them and try their product. Thought you might be interested.

    I have slowly cleaned up my diet over a decade and there are tons of things I just don't eat anymore. Sometimes when I have milk on it's own it tastes sweet and most processed foods taste disgustingly sweet. As a sort of treat I bought a pack of flavored, tart, sugar candy today and eating it made my tongue bleed. So I'm done eating that as well. Most of the things I cut out of my diet I just stopped eating because when I slowed down to enjoy something I knew was bad for me, it just didn't taste good. It's pretty rare for me to stop eating something for as dramatic a reason as bleeding, though.

      Yes, milk is actually quite sweet! I was so surprised by that when I first got my sugar down and went back to raw whole milk. It feels like a treat all on its own! I will once in a blue moon find myself in the same boat, wanting to try a cheap milk chocolate or something, but I take a bite, and it's gross! And hurts my mouth! I've not had bleeding, tho you poor thing, ouch! The Nourishing traditions people don't recommend chocolate at all but I haven't totally given up on that one, I just make sure to get the really dark bean to bar stuff once in a while and just a tiny piece is all I need to scratch the craving!😋

      @@apinchofpatience I think chocolate is HUGELY nourishing! I think if we could get traditionally grown and processed chocolate it would be much more so, but in the mean time I buy Unsweetened Bakers Chocolate (100% chocolate). Because of the tempering it is hard to chew but you can break pieces off and just let them melt in your mouth. They are rich and bitter and have a sort of mineral like quality. I know that sounds bad but it is nice, like enjoying a good cup of black coffee.

      I love your videos! Merry Christmas. Could you provide me with recommendations for more books to give me a practical approach to this that I can phase into a more healthy lifestyle? We don't eat processed food, bread, seed oils, or sugar but there is more I feel like my family could do like grind our own flour. We mostly each fruit, veggies, and meat. Ps. When I watched this video I just thought how awesome it would be if you were running the FDA. You could fix our system and lower use of drugs.

I think you are already off to a great start! Cutting out the junk is a huge step toward optimal health and nutrition. Heaven knows nobody is perfect, but hopefully, we are doing the best we can for our families with the information we have at any given time.     Very well presented. I LOVE bread but our household works best on a lower carbohydrate diet.
    Some household members have had health challenges which necessitated a change in eating habits. So everyone in the household is going for no sugar/very low sugar, mostly whole foods diet.
    I usually bake sweet treats between Thanksgiving and New Year's. This year I'm making some, as they are celebratory foods in my eyes, but fewer of them. So one pie at Thanksgiving and another at Christmas, as opposed to the one a week i typically do during the holiday season.
    Baked apples have been a hit. A few added raisins provide extra sweetness, or a dollop of maple syrup with some cinnamon and nutmeg make it quite festive. If the apples are really sweet, no need to add extra sweetness.
    We are looking at some readymade items that were favorites and finding homemade options that suit.

    I consider margarine a criminal enterprise. Developed to fatten turkeys more quickly for market. Worked great except the turkeys died of heart attacks before market. Lots of money had been spent and they still needed a use for it. World war was waging and butter was rationed. Homemakers had to get by with little to no butter. Knowing that their product caused the death of the turkeys, they marketed towards the Homemaker. Little packets with yellow dye was included to make it look more like butter. Many women used it because they could bake without using the butter ration. After the war, butter was once again the preferred choice. Company profits were hurt. It was then that butter was vilified. Pharmaceutical companies and then the medical establishment began to say that butter was causing the heart attacks. Heart disease was quite rare before margarine. Heart disease became more common and people were scared. They fell for the propaganda even though there had been no research to support it.

      There is *SO MUCH* we have been lied to about!! So many absolutely refuse to admit they've been duped. FDA doesn't stand for Fine n Dandy Agriculture!
      If you haven't already, dig into why so-called "safe canning practices" have been pushed so hard.

    Excellent channel ' really enjoy your informative content. But as a life long grain farmer I've never grown or harvested a wheat berry . There is no such thing . Grain is a grass and grass makes kernels . Kernels please . Lol . I don't why this bothers me so much but it dose kinda insult this old grain grower . But what dose bother the most about grains is exactly what you've talked about with grain and beef . Hybridized grains really are sickening before we even plant it ' it's toxic. At least with the beef we produced it was completely healthy before it left our farm . But then ...

    I live in the city in an apartment, no yard , basement , balcony etc. is this something a person in my living condition can do. Also I love you meat brining would I be able to do that as well and how do you store the rest of the meat long term. Ty love your video and how you educate

      You could certainly brine meat in your apartment! As long as you have a cool spot to put it, which could even be the fridge if you want!

    I know bleached sugar is bad for us but what about pure cane sugar that is unbleached, like the turbinado sugar?
    I like to get Florida Crystals brand sugar in the green bag that is a light brown in color. Not as dark as dark brown sugar. It tastes sweet but not chemically sweet like the white sugar.
    I can't stand Stevia, it tastes very fake to me. Same with the other "new" sugars like monkfruit, although that one has been somewhat okay.

      Thank you! I use the Wondermill Jr. Deluxe and I really like it! I especially love that it comes with stainless stones and a masa auger so I can mill wet things, like massa and nut butters! And it has stone grinding stones and a standered auger for grains and dry things. That was a big selling point for me because my family loves fresh masa 💕 I've had it for 3 years now, and it's a great little hand mill, I use it almost daily!

    I buy non- gmo grapeseed oil to use in addition to avocado oil. (Because of the cost of foods right mow). What are your thoughts on grapeseed oil?

    Pasteurisation is a 15-second exposure to 75 degrees C.
    Boiling point of water is 100C.
    Lipase isn't affected by pasteurisation. None of the arguments against it stack up at all - please read more.

      It all depends on which research you find credible. I know many people are totally on board with it but I will not consume pasteurized Dairy personally, I have noticed too much of a health impact in my personal health to discount the findings on it.

    Does sugar curing work the exact same way as salt curing but just using sugar? I'd love to see a video on that if you're looking for video ideas :)

      I have never done more than a little sugar added to salt cures (I know up to 50/50 works great) but I do think its really similar... Ill look into it! I try to keep my sugar consumption low so it does not seem as practical for me but it never hurts to have more options for preservation! Ill add it to my ideas list, thank you!

      With the salt cures that I've done, my wife hasn't been a huge fan of it b cause it turns out too salty, any tips?

      @byronhsu9786 I'd try cutting the salt with sugar if your up for it, I've done up to 50/50 salt and sugar mixed, I especially like using a brown sugar like sucnat or a beet sugar even, adds really nice flavor! But depending on how your using the cures, soaking the portion you are going to use in cold water for an hour or so before cooking can help pull a lot of salt out!

      Check the lable for anything that says "strengthen" or "conditioner" and also look up the company online and see if they have any further information. King Arthur does not use it, and Azure Market does not either, I know there are others, but I really love Azure, so that's what I know and use.

    Don't quote me, but i think cows that are fed on pastures are one of the only animals that provide vitamin k2 - absolutely vital to getting the full benefits of dairy. Not sure if goat and sheep milk contains it, but its specifically from cows eating grass and how they digest it.

      All the ruminant dairy animals eating a natural diet of fresh grass produce vitamin k2, so raw milk from grass fed cows, goats, sheep, etc... they do produce at different levels and I think certain breeds of cows are at the top but I'm not positive there. Fish eggs, organs, and animal fats (lard, tallow, schmaltz) are also good dietary sources, but I think milk (butter fat in the milk) is one of the top!

      @@apinchofpatience how amazing is nature. When we look at how far gone commercial industrialisation of our food has become, it almost seems intentional. Thankfully we found a local grocer that sells only organic, natural foods and in most cases its locally sourced. Thank you for all that you do, this video was great!

    Do you bake your bread with 100% whole wheat flour? I know all-purpose flour is less healthy than whole wheat but 100% whole wheat loaves are so dense.

      Yeah I was using azures unifine milled whole wheat bread flour for a couple years and that still gave a pretty lofty loaf for whole wheat but I switched to milling my own grains in 2020 and I'm making 100% fresh ground whole wheat loaves right now, they started out as hockey pucks 😂 but I'm getting the knack for it now, quite different working with fresh ground flour. It will never be as lofty as all-purpose or even the azure whole wheat, but I'm getting nice loaves now, dense but soft and chewy like sourdough should be! I used a white bread flour to bake bread for years, and sometimes I do miss the big impressive oven spring I used to get, but the flavor is also so much more now, so there are trade-offs 🤷‍♀️

      @@apinchofpatience I might try it. I did a 1 part whole wheat to 3 parts all purpose flour sourdough bread and thought THAT was too dense. I do want to have healthier bread though so I might just try harder to enjoy it ha. Love all your videos!

I'm actually planning to make a video or small course on whole wheat and fresh milled sourdough, but I'm struggling with imposter syndrome 😅 need to just do it! You inspired me to buy the Nourishing Traditions cookbook and I've been reading it like a novel. There's so much food wisdom that's completely lost in our modern fast food society and pretty much everyone is sick because of it. It's so important to get this information out there and you're doing a fantastic job of it!

      If it's 100% monk fruit, yes, but a lot of the time, it's cut with artificial sweeteners that are a hard no for me. Pure monk fruit is pretty expensive as well and I have read mixed things on baking with pure monk fruit, it seems better suited to sweetening liquids than baked goods but I haven't experimented with it personally so that's just second hand speculation on that front.
