Beautiful... both the knife and the video! Thanks Stephan. Sadly this is , again, considered a vicious, murderous weapon of mass destruction in the U.K.! So sad 😞
Moin, mein lieber Freund! ;-) Herzlich, Stefan
Thanks for another great video, Stefan! This knife seems to try and capture traditional and modern in one design. The partial swedge is not one I’ve seen before and that steel is new to me as well. Who makes the steel?
Bravo. Well presented. I like the shape and material of the blade, not sure about the handle. Overall, a lovely piece though. And the pouch is intriguing. Nice to get something other than leather. You inspired/corrupted me to buy quite a few knives lately, and to visit both Thiers and Laguiole. In the Chambriard shop, your name came up and was immediately recognised and appreciated by the friendly and knowledgable assistant. He expressed the hope he might one day meet you.
It's really nice to see a new practical use for cork considering that cork oak forests are under threat of being cleared due to the drop in demand for cork for wine bottles. It's a beautiful material. Excellent and interesting work as always.
As always, a masterclass on video editing and presentation. Did I miss a report that the book is now available in English or did it just slip my mind? Thanks Stefan for your work. Always a good day when one of your videos appears.
The cheese is called "Lingot d'Or" in French. Here in Germany it is sold as "Elsässer Winzerkäse". www.ermitage.com/en/our-cheeses/local-cheeses/lingot-d-or
Dear Stefan, I have been enjoying your excellently arranged and informative videos. I would like to ask which ateliers you would recommend most for the French Regional knives such as the Roquefort, Tonneau, Shepards Issard ? Thank you very much. Jose Manuel
Thank you! - That's a tough question because there's no cutlery company that produces the entire range of all known regional knife patterns. For example, Laguiole en Aubrac and Fontenille Pataud make only a few regional knives but at a high level of quality. Thiers-Issard, on the other hand, makes a lot more patterns but the quality isn't on par with the high-end brands. So it really depends on which specific regional knife you want to buy.
Thank you very much for your response. I very much like Le Garonnaise, Le Roquefort, Le Tonneau with corkscrew, Le Voyageur. May I impose upon you once more for your opinion. I have seen the brands Homme des Bois, Le fidele, Au Sagot.... Thanks. jmh
this one has more of that traditional tacticool type of look you would see on a regular knife here in the US. Although im sure its good quality Im just not sold on this particular one. AN the price is far to high for what it is in comparison to equal knifes in US. Ill stick with the more traditional french knives
Thanks Stefan for your top quality video, regards from Antretoise team ! I hope you all enjoy our knife !
Thank you, Thibaut! I'm glad you guys like the video.
very excellent video quality, as always, Stefan. thank you.

Thank you! I'm glad you enjoy my videos.
Good to see another review. Very eye catching knife. I'm going to France in April and May next year, naturally Thiers is already a booked destination.
Stefan, your videos are getting better and better. This one was fantastic and I'm very interested in finding one of those knives.
Thank you! From time to time I try new techniques and styles. I'm glad you enjoyed the video.

Fantastic. This would have to be one of my favorites you have shown here. A stylish, modern, and practical folder. Great that it locks too. Love it.

.....immer wieder einfach gut, sachlich,
Danke ☺

Nice knife, nice video, congratulations Stefan.
Thank you!
👍🏻👍🏻

Thank you! The English translation of my book was released about half a year ago. It's available on Amazon.

Ricci, du überschätzt meinen Einfluss.
Please tell me -- what is the cheese you begin slicing at 0:20?! The colors and texture are gorgeous.

Ahh, I forgot the Shepherd's Au Droit
Yes, these are brands at the lower end of the price range. The quality is usually ok, but don't expect the Fontenille Pataud level of craftsmanship.
Great thanks. @@StefanSchmalhaus
