    𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:
    𝐅𝐨𝐫 𝐒𝐞𝐯/𝐍𝐚𝐦𝐤𝐞𝐞𝐧:
    * Gram Flour (बेसन) - 1.5 Cup
    * Arrowroot Flour (अरारोट) - 2 Tbsp
    * Salt (नमक) - Some
    * Turmeric Powder (हल्दी पाउडर) - 1/2 Tsp
    * Carom Seeds (अजवाइन) - Some
    * Asafoetida (हींग) - 1/4 Tsp
    * Water (पानी) - Some
    * Ghee (घी - 2 Tbsp
    * Oil (तेल) - Some
    𝐅𝐨𝐫 𝐆𝐚𝐭𝐡𝐢𝐲𝐚:
    Coriander Seeds (धनिये के बीज) - 1 Tbsp
    Fennel Seeds (सौंफ) - 1Tbsp
    Cumin Seeds (जीरा) - 1 Tbsp
    Cloves (लौंग) - 4-5
    Black Pepper (काली मिर्च) - Some
    Gram Flour (बेसन) - 1 Cup
    Arrowroot Flour (अरारोट) - 2 Tbsp
    Refined Oil (तेल) - 1.5 Tbsp
    Salt (नमक) - Some
    Turmeric Powder (हल्दी पाउडर) - Some
    Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च पाउडर) - Some
    Crushed Red Chilli Powder (कुटी हुई लाल मिर्च पाउडर) - Some
    Baking Soda (मीठा सोडा) - Some
    Water (पानी) - Some
    Oil (तेल) - For Frying
    𝐑𝐄𝐂𝐈𝐏𝐄:
    𝐅𝐨𝐫 𝐒𝐞𝐯/𝐍𝐚𝐦𝐤𝐞𝐞𝐧, in a large plate, mix together Besan, Arrowroot, Salt, Turmeric Powder, Asafetida, Carom Seeds Powder & Oil. Mix all well & make a soft dough by adding some Water. Grease the Sev Maker/Machine and thin lattice plate with Oil and put the Sev Dough in it. Make the Sev in the medium heated Oil and fry it till it becomes crispy & lightly golden. Drain the excess oil. Break these fried long strings into small pieces. Let them cool, and store them in an airtight container. Enjoy!
    𝐅𝐨𝐫 𝐆𝐚𝐭𝐡𝐢𝐲𝐚, take a mixing jar & put Coriander Seeds, Fennel Seeds, Cumin Seeds, Cloves & coarsely ground all well. Take a large plate/thali & put Besan, Arrowroot, coarsely ground Black Pepper, ground Masala, Asafetida Water, Refined Oil, Salt, Turmeric Powder, crushed Red Chilli Powder, Kashmiri Red Chilli Powder & Baking Soda. Then little by little add Water & bind tight dough. knead the besan mixture into a dough. Pour a little oil on the dough and knead it again. Apply some Oil to the dough and make the Gathiya. Roll them with the fingers to give them shape. Then fry them in the heated Oil and make them crispy. Let them cool, and store them in an airtight container & enjoy! In this way, market-style Sev & Gathiya will get ready at home easily.
