  • Buta Yama meaning Pork Mountain is a ramen chain that has 20 restaurants in the Tokyo and Yokohama area of Kanagawa. True to its name its main feature is the extremely flavorful and tender pork in its ramen.
    Buta Yama describes their cooking methods and flavor like this:
    "The characteristic of Mt. Tonyu is the rich soy sauce in a strong soup that is second to none. It is characterized by soft butcher meat and hearty vegetables. The soup is a deep soup that cooks a large amount of butcher meat for tens of hours, and layered with the umami of the bee. Please enjoy such thick buta meat and plenty of vegetables, "washushi" and noodles that are satisfying to eat!"

    That was a "mini"? In Toronto, that would be a "large", and would cost at least double the price...
    I visited Tokyo almost ten years ago, and I ate at a small ramen bar near my hotel, IBIS near Shinjuku Station. Any size for ~700(?) yen. Quite good, I ate there 3 times, lol! Staff was young and very friendly too... I wonder if it's still there...

      Yes, good portions and value. For an extra 100 yen you get basically double the pork serving.
