  • Today on Booze On The Rocks, we make a homemade Cream of Coconut. Coco Lopez creme of coconut is the choice for many bars and home cocktail enthusiasts worldwide, but it can be hard to source outside the US. This DIY recipe avoids all the emulsifiers and stabilizers for a tastier, fresher, more natural coconut cream. Try it out, and let me know what you think.

    CREAM OF COCONUT
    1 Cam/400 ml/1..5 ml Coccnut Milk
    1.75 Cups/375 g White Sugar
    1 Pinch Salt
    Method
    1. Add all ingredients into a pot on the stove top.
    2. Heat slowly until all of the ingredients are incorporated.
    3. Allow to cool and then pour into a clean bottle.

    Great stuff. I actually made this about 30 mins before checking out your vid! My tiki party is at the end of this month, and I know I will be asked to make Pina Colada's. I find syrup vids like this very useful. I am in England, and have no chance of picking up the brand you mentioned. My local Co-op has one that I have used before - also 400ml. Does the job nicely.     Great video David !!! To keep it longer freeze it, I do. So have the batch made keep half for immediate use (2 weeks) and freeze the other half until you fancy more. No heat no problem, I make it with 1 can of full fat coconut milk and 1 can of sweeten condensed milk. Sinfully silky good and only need to blend it no heat.

    Fortunately, Coco Lopez is the same price as can of coconut milk here. Lol. So I rarely make it but this is a great recipe. Cheers pal!

    Noice DIY. I always heard adding vodka helps, but never knew how much. looking forward to see what cocktail you make out of this one. cheers.

    Have done this before - the need for the salt cannot be underestimated. The amount of it, however, can - get it in there, but don't go crazy. You can always add more, but it's real bear to take the stuff out.

    I've experienced that this lasts way longer than a month in the fridge! say 3-4months instead! suger does help alot with that :D

    I was wondering if this would work better with palm sugar

      That is a good question. You can definitely use palm sugar as it lower on the glycemic index. It will work just as well. Try it an let me know what you think.

    Why don’t you use sugar syrup, no heating and dissolving?

      That is agreat question. The reason I do not use a sugar syrup is that the end product would be thinner beacuse of the added dilution of the coconut milk.
