My Hungarian mother would cook something similar for my stepfather (a Spaniard). She bought Spanish cookbooks to make some of his favorite Spanish foods. She put chorizo, onions, peppers, along with the (mostly) potatoes and garlic. She would add Sazon seasoning with saffron (real or just coloring? IDK). Still love and make it myself to this day. Yes, we flip the same way! She also made a mean Paella (I make a shellfish-less version with chicken and chorizo since spouse is allergic). Not bad for a Hungarian! ❤ Love, Health and Peace to you!

In 1994 I did a summer exchange in Spain. Beautiful country and amazing food. My host mom made me tortillas to take to the beach with my friends. Image my American surprise when I opened the tin foil to find an omelet.

Brilliant trick to put the potato mix into the egg mix. I imagine the heat will slowly begin the egg coagulation, meaning it'll be easier to cook the eggs through and achieve that solid 1-2-cm (0.5"-1") thickness. We tried this and the whole family absolutely loved it. Easy to make and so very tasty. We added a little more garlic and onions, but that’s our taste. Great with the crusty bread. This will be a firm favourite for the future. Thank you! 👍😘

My Spanish mother would make this often but she would just add the egg mixture into the pan when the potatoes were cooked. I like your idea of letting the potatoes "marinade" in the egg mixture to allow the melding of flavors. Riquisimo!❤

Every region in Spain makes different versions of Tortilla, most people are stuck on only the traditional potatoes, onions and eggs, but there are so many versions that are authentic, much love :)

Last time I was in Spain to visit my parents in Paterna near Valencia, I took a bus into town and near "El Corte Ingles" there was a take away and they had tortilla inside a crusty fresh cut baguette. AAAAAAWWWWWE....I still remember that tortilla.

I went to Spain for 10 days on vacation and every Buffay table in the morning had this! I absolutely loved it. Omelets remind me of happy times at my parents' lake house when Dad made us all his famous "garbage" omelets that had a little of everything, served with a side of one of his delicious homegrown sliced ripe tomatoes. So good, and very filling.
He was an E. Texas farm boy during the Great Depression and learned to use what they had to make a hearty breakfast before working in the fields. Since they had lots of chicken eggs, sausage from their hogs, homemade cheese and butter and all kinds of vegetables from my grandmother's garden, omelets were the perfect dish!

My Mother was shocked... she said she never knew about those. And she loved them! Amen! But my children grew up with them, and now they're making them for their kids. I learned how to make this when we were stationed (Navy) in Rota, Spain. Forty years later, am still making it about once a week. Sometimes I westernize it with meat, peppers, cheese and tomatoes, but this version is still my favorite.

I used to love this dish! Omelets with potatoes and garlic (or even the easy grab ‘n go muffin tin version) are delicious!
I can't wait to make this! I have all the ingredients. I have 7 chickens who lay eggs daily, so I'm always looking for ways to cook them. Their eggs are so much better than store bought, fresher and my chickens get a varied diet and lots of cuddles (don't know if that makes a difference, we just love our sweet chickies!)

I always remove the outer layers of the onion too because they are tougher, and I feed them to my goats. It's not like their breath could get worse!
Then I can easily use the grater on my mandoline to shred the onion (after putting the onion in the freezer for 20 minutes or more) which is easier for me than dicing. I found one of those older "as seen on TV" Ronco kitchen gadgets at a thrift store that's a mandoline with interchangeable cutting parts that sits atop a plastic box to catch the slices/shreds. Works great! Best dollar ever spent!
I also found a really good Mundial chef's knife at another thrift store and can't believe how much easier it makes chopping. I had to pay $2 for that jewel, but looked it up and it retails for @ $50.
Having good tools makes cooking even more enjoyable. I love that you talk about the tools you use, and how to get best results with them.

This looks great! I made Spanish tortilla a few times, but it wasn't as flavorful as this one looks, with all that garlic. I will definitely try it! By the way, what a great way to flip the tortilla, using a plate. I'll do that as well for the next one!

"New potatoes" is just a term for plain white potatoes that are dug up early in the season, before they've gotten starchy. Yukon Golds are actually the perfect waxy potato for a recipe like this, so you made the right move!
I've made this for years for parties. I'll make 10 or 15 of them, wrap each one in plastic, and refrigerate. I serve them cold or room temp and people LOVE them! I usually add yellow and red peppers, too.

This will be my adult version. I used to make a version with less minced garlic, shredded onion and shredded potatoes so children would like it.

Cooked this for my dinner tonight. Followed everything except for the potatoes. I mixed 2 Tbsp of olive oil, salt & pepper to taste to the potatoes and cooked it in the microwave. Cooled it a little then add it to the beaten eggs. Came out very good. I cook the potatoes & onion omelette the same way. Less oil. Thanks for the recipe.

Firstly apologies to Spain! I have been on a bit of a quest to find the ultimate breakfast egg recipes from around the world. Tried making authentic Spanish potato omelette a number of times to understand what the fuss is about. Similar recipes to this but without garlic (most supposedly authentic recipes I have found did not include garlic). It’s nice but frankly a little bland for my tastes. Maybe my technique is missing something.

Haven't made a Tortilla de Patatas since moving here in September. Going back to CA soon and will miss the cheap and 1/2 way decent Consum brand ones. That and 1 liter containers of Gazpacho will be greatly missed. Only tried making Gazpacho once while here and since I prefer red to green bell peppers, used red...big fail. I'll try your recipe once I get back to CA. Gonna miss the cheap price of Saffron and Bomba rice here! Garlic to a Tortilla? Always wanted to do that, but try to stray too far from traditional recipes.
Well I've been home in LA for 8 months and have been cooking up a few Tortilla's. This is my favorite recipe. Usually I skip the onion and garlic as I'm usually very hungry when I cook them. My only problem was the ratio of eggs to potatoes. All have been good. I did take my only nonstick pan, a 24 cm Le Creuset pan to the store to find a plate that fit it perfectly. Thanks for the correct ration (in kilograms) of potatoes to egg. The waxy potatoes available are a bit smaller, so it's 6, rather than 4 potatoes. While I miss the convivence of store-bought Tortillas de Patatas, mine are so much better thanks to you. BTW I got your large fry pan and it works on most of your recipes way better than my stainless All Clad, and a way better price!

LOL I love this guys recipes, but I often add chicken. Only thing off the top of my head that red meat would be to add ox tail to paella with the chicken/rabbit meat.
