- Mastering a classic Spanish dish just got easier. The wonderful Omar Allibhoy is back with his favourite recipe for Tortilla de Patatas - or Spanish omelette to you and me!
There may be just three ingredients in this dish but each one is used to create an omelette that has bags of flavour.
Caramelised onion provides a delicious natural sweetness while the softened potato gives texture and depth. Mix through eggs and cook until golden and firm to the touch. The perfect omelette will be slightly soft and gooey in the centre. Makes you want one now doesn’t it?!

FOR THE NON SPANIARDS:
People, keep in mind OLIVE OIL is waaaaay cheaper in Spain, we are the largest producers in the world (45%), so it is not a crazy amount (for us) what Omar is using.
And the oil is NOT BURNED, so you can reuse.
We have been doing it for generations, and our population keeps growing, so we are not killing ourselves reusing olive oil.
He took the potatoes out with a skimmer, leaving very little oil in them. In my family, we strain them before adding them to the eggs.
I don't know about him, but I put that much oil so I don't have to keep moving the potatoes around. Also, I kinda like the oniony oil for cooking other things later (:
María Álvarez André If the pan gets super hot, couldn't the oil burn though? Burnt Olive oil is seriously unhealthy, I think if it goes over 180c you're f*cked. "As hot as possible" seems pretty close to that.
LlewenEbag You're right. I'm from Spain and it's well known that burning olive oil is very unhealthy. You must low down the heat before it starts smoking.
LlewenEbag I have never taken the temperature with a termomether, and I think only the chefs (or wannabes) do, but if the oil is burned it is visible, and you can also smell it.
María Álvarez André I totally agree with you! That's how I usually cook although I'm not Spanish ;)
serves 6 people my ass I'm eating all of it myself.
hshahah chill
+Starmatrics from experience I would say it feeds 4 people more or less. Beware that it contains eggs and potatoes, which really satiate your stomach quickly.
With the amount of calories it's meant to serve 6 but it doesn't even fill 1
I disagree again zzzzzz but anyway, I should see your belly to attach to this belief
'Merica
Omar: "be very generous... half a liter of oil".
Me: "imma head to the comments section".
same lmao😂at least it can be reused
@@rexlongfellow It can only be reused for frying though. Never use it again to cook anything else. Otherwise the oil will taste like potatos xD
@@115DELDE thanks for the tip haha😂future me is gonna look back on this moment
@@rambro1stbud that is why I am being explicit, because not everyone can imply that he is assuming it.
After several years this is still one if not the best videos on tortilla de patatas on CZcams and I still love it.
As an Spanish cook i can say you fucking nailed it, is one of the best tortillas i ever seen in my miserable life.
Zurrapa47 hahaha you are funny
Zurrapa47 nailed it except the name cause is not an omelet.
no es ofensivo que le llame omelet? a ver que es lo mismo pero en frances.... pero... no que no os llevais bien con los franceses?
suits ur profile pic mate
Zurrapa47 supapaaaa dejate de rollos
You know a recipe is going to be good when it starts of with 500ml of oliveoil
You can fry the potatoes and onions (optional) with sunflower oil (for instance), and use olive oil (a teaspoon or so) to cook the tortilla ;)
That's approx 1 Jamie Oliver tablespoon of oil
@@RoryAherne lol
I am Spanish, and the recipe looks good for me (I prefer a bit less coocked) but anyway, i agree with him, we always keep that extra vierge olive oil to cook potatos or eggs multiple times so its not wasted
@@RoryAherne most underrated comment of the year!
I did it!! I DID IT !!! I am the World's Most Incompetent Cook, and I managed to make a Tortilla that looks almost like his !! Omar must have tried this out on an Idiot Cook like me, before he made the Video - - the scariest bit was flipping the pan and plate, but he is right, if you put a fair bit of pressure on the plate, and a good strong hold of the pan handle at the end nearest the plate, the pan and plate really do stay together as you flip them. And I am not that strong. Thanks so much, Omar - so PLEASED to succeed. My first YT recipe :-))
Enhorabuenaa!
Same here! First recipe I learnt, very proud of the outcome. Congrats Grace!
@@perlyax Thank You, Perlyax :-)
@@krmunoz2169 Well Done, Kristofher :-) Makes one just that bit braver in the kitchen, eh? xx
One of the many great gifts that Spain has given the world. Unbelievably wonderful.
Why am I watching this at 4 am with no ingredients

Oh yeah? Well I'm watching this at 1:51 am and I'm tired. 😢😭😭
lol...its 3:43Am and I watching this ..
it's 330 am here and I'm about to make this bitch 😂
4:06am now and I also watching this :))
Me: *lives alone*
"This recipe serves six people"
Me: Oh well
Szaam just divide the recipe by six (half a potato, a small piece or two of onion...) and use a single egg pan :) or this recipe actually serves lovely cold, you could make the regular amount and use the leftover for meal prep and side dish for a bit (but that might feel like eating a lot of the same)
You can eat that six times.
Cut the ingredients by half and do it up in a 6" fry pan.
I made this for myself and it was delicious! Had it for lunch to take into work for the next few days :)
It's okay
We don't judge
Guys I'll tell you what. I've followed this recipe for a few years now and every time I receive the highest compliments from my Spanish friends. Follow it closely!
I don't have Spanish friends but I make it a few times a month now and its a great way to use up extra potatoes and is cheap and best of all has all the ingredients! Definitely recommended!
I went to Spain last year and ate this omelette everywhere I went. I vowed to try and make it when I got home...now I have the perfect recipe. Mil gracias.
Same here!! It’s my absolute fav!!!
The best spanish omelette recipe you can find in english. Dont trust any other than this guy.
@Charley Says - It's worth every minute!
I am Spanish and this certainly looks like a top notch tortilla.
@Charley Says I cook it in 20 minutes for 3-4 people that is. Forget the nonsense about the soaking for 20 minutes, 5 minutes at the most but you´re quite right we want to eat it as soon as possible so most cooks don´t even soak it at all! Having said so I must add that in Spain it´s usually cooked lets say in the morning to be eaten at lunch time. Resting time once cooked makes it so much nicer, no need for it to be hot.
And please Omar drain the potatoes, beat the eggs and don´t use so much oil! The onion and potato mixture is something between poaching and frying... NOT caramelized!!
@@amparosan.y.7176 cariño, la tortilla esa es de 10 no me jodas
He has the accent to back his claim.
Jamie you did so well bringing Omar to this channel. His recipes are so easy to make but so tasty and that's usually what an average guy like me just wants
questir1 well, thats what spanish cuisine is all about :)
questir1 omar is the best
questir1 i like omar too
Great recipe... here's my earth-friendly tip: Cover the bowl with a plate instead of disposable aluminum foil to reduce unnecessary resource waste/landfill bulk.
Or just put it in the microwave and don't heat it, to make sure it's in a closed space.
It's aluminum, not plastic. Did you think all foil was made from virgin mined aluminum? It gets recycled
Here in Australia we RECYCLE that foil. As MANY countries do. In fact you get new foil that's 100% recycled.
@@OffGridInvestor Recycling that foil takes energy that could be otherwise used for a better cause
Chill Michael .Chill.
Many are saying that he’s using a lot of oil but it’s just the same as when you fry fries, chicken or donuts.
I still couldn't believe donuts is fried and not baked
Steven Kane they say it because they are not form Spain and they have never eat a Tortilla and they don’t know how to do it, for me it is just a normal quantity
@@ciangavin7470 ok
@@thedarkesttimeline8715 but they gobble up a million other deep fried things, but for some reason, that's not weird to them
Don't think they got past that bit... like you are eating all of it instead of frying with it
I bloody love this guy
This is the first time I see a Spanish dish cooked right in an English speaking TV show. The very first time. And yes, I've seen Ramsay's paella.
Also, extra virgin olive oil is really good for you, there are many misconceptions about that.
You have no idea how Americans will misconstrue what you say. they will drink the extra virgin olive oil between McDonald's Big Mac's or 24 ounce steaks. Too many Americans mistake "healthy" for "you can eat outrageous quantities."
Garry Perkins
That shouldn't have made me laugh so hard, but, yeah. In case there's any doubt, no, we don't drink olive oil directly from the bottle, we don't eat food drenched in the stuff. I hope I won't be held responsible for any overdoses.
That's not entirely true. I drown my salads and veggies in olive oil. Well, not literally, but quite.
I think there's a difference between dressing a salad with a generous amount of olive oil and drowning it... Ultimately it comes down to preference, but drowning a salad in its dressing isn't exactly the usual thing to do. I mean, I have toast with olive oil and garlic for breakfast almost every morning, but even that's still a healthy amount.
livingsansara Yeah, it was a bit of an hiperbole. I meant I like to drizzle a generous amount :P
I have a spanish nan and she makes this and I LOVE it so much. I am gonna make this myself and surprise her! She is always the one cooking. I will let her rest and enjoy some spanish omelette/Tortilla. 😃 😊
This is by far the best Tortilla recipe I have ever tried. Mixing the eggs with the cooked potatoes and onion and letting them rest is genius! A Million times better than the Jamie Oliver recipe which terrible :)
His accent is what really makes this video for me.
Calm down gay boy.
Yeah, you can really hear the Spanish sibilant
I really like the way he does this video. More from Omar, please!
This is the best recipe for tortilla. Amazing flavours, clear and easy to follow. Letting the potatoes rest in the eggs makes a huge difference, the tortilla is incredibly moist as a result. I've made it many times now and it always tastes phenomenal. Thank you so much!
Vanessa for president🎉 😉
I am from Spain and I must say that this recipe is exactly what I, my mother, and my grandparents used to make at home. The only difference is I beat the eggs and then add the candied potatoes and onion. And I also let them rehydrate with the beaten eggs for a few minutes. This is the real Spanish potato tortilla (with onion). Congratulations.

My cousins grew up in bilbao Spain. Its where their mom is from. 2 still live there. Every year when they came to the states to see their dad they'd bring a bunch of tortilla sandwiches. I loved them so much. They'd add chorizo to them as well. Now I need to try this
It makes me sad that this dude said this will serve 4 to 6 ppl, when i could eat a half of it in one go ;(

+Sarah Mao same right now except for my dad
"Huh, it has only three ingredients. In my budget"
*Sees him pour an entire 500ml bottle of oil in the pan*
Olive oil is not as expensive in Spain, that's why xD
If you can't afford 500 ml of olive oil, you should not be watching CZcams.
What people do is they keep a glass bottle with the used oil in. You need to:
1. Make sure you don't burn the oil - gentle heat does it
2. After cooking wait until it cools down
3. Pour it into the glass bottle through a fine sieve to remove debris
4. Re-use it only a couple of times
5. Use the oniony olive oil to fry an egg between *tortilla de patatas* cooking sessions
@@alexvi4251 you can also leave it in the pan cover it and then use it again to make fried potatos
@@alexvi4251 But in this video he used it with high heat, so what gives. And does it effect the taste of the food if you reuse it?

This has to be shared. You can combine it with some bread with tomato and a nice salad.
it looks very small but it's heavy AF

The magic of the recipe is that you are constantly thinking "This is going to be a disaster" "everything is leaking" "why am I even trying" and just at the very end, you get a proper Spanish tortilla and you truly don't know how is it even physically possible.

Omelette + Potato 😍
The most authentic recipe I have come across, after having visited Spain dozens of times since the 1970s.
It is actually much better then most I have tried in Spanish restaurants, which tend to be dry.
For years, I couldn’t quite get it right, but after watching this video, I have cracked it: use lots of extra virgin olive oil and cook the onions first so they are caramelised. Thank you.
I'm Argentinian and grew up with a Spanish Grandmother. This is without a doubt one of my favorite dishes. And when I feel like splurging, I'd rather have this than domino's or Mcdonald's or In N Out any day of the week.
It's not mean't to be eaten every day, but it's a glorious day when you do.
P.S. There is a scrambled recipe of this dish that's much easier to make, tastes similar, but the texture is different. I can't recall the name right now, but it's definitely worth looking at if you want a little less egg and oil in the recipe (emphasis on "little").

I don't know why people disliked this. I made this today. I used local potatoes and not as much oil, but the potatoes did take longer to cook. Th egg mixture does get thicker and the overall frittata is fantastic. This is the first time, my potatoes didn't remain raw or overcooked. This goes into my recipe book. Thank you for sharing! Loved it and ate it all by myself.
Oh god, dont call it frittata please, and use more oil. It gets less greasy because it takes less time to cook.

This is one of those dishes where the whole is really greater than the sum of the parts, and execution is the key to getting the most from the limited ingredients. I made it once and it came out very average. But, I made it another time and it was absolutely gorgeous. Kudos for the recipe :)
By the way - the recipe is great! I've been intimidated by this dish for years. It worked out fantastically following this video. I used a cast iron pan, because I don't do non-stick. It was a bit heavy, but the tortilla didn't stick at all, and the clean up was minimal. Thanks Omar!

***** :) Thank you for teaching this! I made it and my entire family fell in love with this omelette :)
I have just made this never having made a Spanish omelette before and it is absolutely delicious. I followed the instructions exactly and found it very easy. The caramelisation of the onions is so tasty. It will easily serve six although I'm on my own so will be overdosing on it, yum. It does seem a lot of oil but you need that to cook the onions and potatoes but you drain it and it can be used again, I'll just be cooking with it as normal and I'm sure it will add tremendous flavour to whatever I'm cooking. This will definitely be a favourite from now on 😋
