Parsi Malido | Parsi style pudding for prayers | Semolina dessert | Malida

  • Malido is a semolina and whole wheat flour dessert or pudding, that is served at most Parsi religious occasions and also as an offering to our dearly beloved as part of their prayer ceremonies.
    The Malido is placed on a silver platter along with fruits and fried crisp poories we call papri.
    My grandfather was a Parsi Priest and he brought this home almost every second day from the fire temple ( Parsi Agyari) for us to eat.
    This is a very special dish as it brings back so many good memories from my childhood
    Ingredients
    1/2 cup fine semolina
    1/4 cup whole wheat flour
    1/4 tea spoon salt
    1 tea spoon ghee
    1/4 cup water for kneading the flour
    2 table spoons charoli
    2 table spoons sliced almonds
    2 table spoons golden rasins
    3/4 cup sugar - 1/2 cup water for sugar syrup
    1/2 cup ghee (to cook the Malido)
    1/2 tea spoon cardamon powder
    1/2 tea spoon nutmeg powder
    1 tea spoon vanilla essence
    Orange coloring (Optional)
    Mehtod
    In a bowl add 1/2 cup fine semolina, 1/4 cup whole wheat flour, 1/4 tea spoon salt, 1 tea spoon ghee and 1/4 cup water. Add the water in 2 to 3 parts and knead the flour. Knead the flour for a minute and cover and keep aside for 15 minutes
    After 15 minutes knead the flour again and make small round thick roties with your hand
    Do not bother about the shape as we are going to fry them and grinds them later
    Place a wok or kadai on medium heat and add 1/2 cup ghee
    As it melts add 2 table spoons charoli, 2 table spoons sliced almonds and stir for 30 seconds.
    Add 2 table spoons golden rasins and fry this for another 30 to 40 seconds until the rasins start to fluff
    Remove the nuts and rasins and keep aside
    In the same ghee add the roties you made earlier
    Fry the roties golden brown turning them every 2 minutes
    If the roties start to burn turn the heat to medium low
    Remove them in a plate and let them cool for 10 minutes
    Transfer them to a mixer and grind to coarse powder ( like thick bread crumbs)
    Remove the ghee in a bowl and keep aside to use later in the Malido
    Clean the same wok or kadai and place it on high heat
    Add 1/2 cup water and 3/4 cup sugar and stir until the sugar melts in the water. Bring this to a boil, once it starts to boil reduce the heat to medium and add the coarse roti powder kept aside
    Stirring continuously cook this for 4 to 5 minutes. You will start to see this thicken
    Reduce the flame to medium low and start adding the ghee 2 table spoons at a time stirring continuously
    After 2 minutes add another 2 table spoons ghee and keep stirring
    After 1 minute add the remaining ghee and stir for another minute
    Turn the heat off and add orange color (optional) I like to add this because we got orange Malido in the fire temple as kids- so it just makes me feel nostalgic
    Add 1/2 tea spoon cardamon powder, 1/2 tea spoon nutmeg powder,
    1 tea spoon vanilla essence and stir everything very well
    Transfer this Malido to a nice dish and flatten it with a spoon
    Garnish with the nuts and rasins kept aside
    Let the Malido sit for 3 to 4 hours at room temperature before serving

    Is it necessary to make rotis and then grind it? Can't the rava & wheat flour be cooked directly? What about the papri that is served along with malido?

    I'm from Karachi. Nowadays our priests don't want to go the extra mile to make these goodies when I was young. There are some ladies making it though. With this malido there used to be daran and papri. I wonder if you know how to make papri especially the sweet crunchy ones. By the way your recipe looks too tempting not to try. Thank you 😊
