Sagan Ni Sev recipe | Parsi festive dessert | Parsi Sev | Navroz Special

  • Sagan Ni Sev (Parsi Sev) Served on festive occasions of Zoroastrians
    These are authentic Parsi recipes and specially this Sweet Sev is made in every Parsi house on occasions such as Birthdays , Wedding anniversaries and specially Parsi New Year.
    Ingredients
    250 gms Roasted Vermicelli
    1/2 cup Charoli
    1/2 cup sliced Almonds
    1/2 cup golden Raisins
    4 table spoons pure Ghee
    1 cup Sugar
    2 cups Water
    1 tea spoon Vanilla extract
    1 tea spoon Cardamon powder
    1/2 tea spoon Nutmeg powder
    Method
    Crush the vermicelli into medium size pieces and keep aside
    Place a pot on medium high heat
    Add 2 table spoons ghee, add 1/2 cup Charoli and stir for 10 seconds
    Add 1/2 cup almonds and stir for another 10 seconds
    Add 1/2 cup golden rasins and cook until the rasins fluff
    Remove this dry fruit mixture and keep aside
    In the same pot add 2 table spoons pure ghee and add the broken vermicelli to this and cook breaking this further
    Roast this vermicelli to get a nice dark golden brown colour
    Take care not to mash the vermicelli too small while doing this
    Add 1 cup sugar and stir for 30 seconds
    Add 2 cups water and cook stirring well for 5 mins so that it does not catch at the bottom of the pan
    Let this simmer on low heat for 2 minutes
    Add quarter of the dry fruits to this vermicelli and stir
    Add 1 tea spoon vanilla , 1 teaspoon cardamon powder and 1/2 teaspoon nutmeg powder to this and stir for 1 minute
    Cover and cook for 5 mins of low heat
    Turn the heat off and let the pan sit there for another 5 mins so that this fluffs further.
    Open and gently fork this cooked vermicelli
    Remove on platter and decorate this with the remaining dry fruits and serve

    Hi Roshni made the sev but I did not use sugar instead I used Natures sugar free however I turned out delicious Thank you

    Hi could I ask a question, my neighbours are Parsi from India and I want to gift them something for nowruz. When I searched on google it said indian parsis celebrate nowruz in august. Is this true and would it be wrong to gift them on Saturday?

      Hi we do celebrate Navroze in March too which is this Saturday and in August we have our new year - so you can go ahead and get a gift for your Parsi friends 😊

    This recipe is nice but again I am confused with ingredients list because in recipe u say 1/2 cup ,
    So my point is please mention or clarify in 1/2 cup in milliliter so, i and also other people get clear idea.

      A full cup is 250ml so a half cup would be 125ml...

      @@anamits hey, u r right from your side because mostly people use 1 cup = 250 ml but also there are 200/220 ml cup also some people use and show and very few are using 150 ml as measure that's why I m bit much confused for roshni how much type of ml cup she use for her cooking videos...!
