    Which of your videos would be good for purple yams (both skin and inside) or stokes potatoes? I want to make resistant starch flour out of them. Normally, I would boil a starch, freeze it for 4 hours and reheat to eat it. I was thinking of making pancakes from what Whole Foods calls Purple Sweet Potatoes (and sometimes I use stokes potatoes).

    If you put a Cling Wrap (or some type of barrier) on top of the container the powder will not get into the cover.

      You are welcome. I haven’t tried using oven. But you can try it with smaller quantity to see how it goes. Use the lowest oven setting though. Once it is thoroughly dried it can last 1+ years.

      @@Globalfoodbook1 ok thanks. I have since gotten a dehydrator and they wont seem to go dry enough to be able to be ground up into powder. Ive had them on for 9 hours

      I’ve never tried drying in an oven. But if you want to try it, use the lowest oven setting and see how it goes.

    When I mix sweet potato flour with water to form the dough and then boil it, why doesn't the inside cook properly? Even though I have boiled it for more than 30 minutes. Do you have any ideas for this problem? "I couldn't find the solutions in any scientific journals or cooking recipes or from anywhere else either."

      Try molding small amounts at a time and flatten it a little bit. This will help the inside to cook better

      @@Globalfoodbook1 I have been studying it for almost 4 weeks, and it's nearly causing me frustration. I can ensure that the dough I form is smooth with sufficient water. I have also mixed it with various types of flour, but it still hasn't been successful. I have also modified the flour, modified the way it's made, followed scientific literature, yet it still hasn't been successful. The only successful method so far is when I mix the sweet potato flour with other flour, but with a lower percentage of sweet potato flour compared to the other flour in one dough mixture.
