Why did you steam your sweet potato again after drying for three days?

Perhaps it helps them store for longer by sanitizing them again after they've been outside for days?
Possibly to improve texture of the finished snack?
Maybe you don't cook them all the way on the first steam before the initial drying?
I'm making guesses here, but these are what would make sense to me. I could also be entirely wrong.
