Ok I loved it apart from the amount of salt but I grew up with a mother who never used salt for cooking, I do a pinch and that’s it but each to their own. I bought a book Hot Pot for Beginners and I will be trying the recipes shortly

How do you make your chili paste ?
I use the same steps as the non spicy paste, except replace shallots and miso paste with 1 cup of rehydrated dried red peppers (chopped up after rehydrating) and 2 table spoons of roasted Sichuan peppercorns. You can adjust amounts to your spice level.
What do you use for dipping sauce?
We usually leave out soy sauce, sesame oil, chopped cilantro, minced garlic, sliced green onions, chili sauce and raw eggs for friends & fam to mix their own sauces
Jason and Angie what kind of soy sauce you use? Since there are so many soy sauce out there....can you name a brand that you like? I have noticed at the restaurant they provide very light soy sauce (not too salty)
m312c3 for Chinese dishes we like to use superior light soy sauce from pearl river bridge. It has less additives compared to other brands.
Why where the eggs on the table are they raw or hard boiled?
They are pasteurized eggs that we made by putting eggs in 140 degree F water for an hour. Sometimes people like to add it to their dipping sauce. Makes the dipping sauce creamier and less salty. A lot of shabu shabu/hot pot places just provide raw eggs.
For those of us who don’t know it would have been nice to see how it’s put together.

Honestly she came off a little irritable to me as well. He was very chill. The salt was not even a lot for the amount of water being added
