Why kosher salt? Is kosher a must? Or will regular simple salt spoil the food?
Any type of salt will work, but I've been using Kosher salt since I started sharing my recipes. Some say it's a bit saltier than regular salt, but I haven't noticed much of a difference.

I tried shabu-shabu more than 20 years ago in Korea and loved it so much. I attempted to replicate the recipe with no success. I love the Suribachi you used in this video would you be willing to share where you bought it? The handle and it being elevated would make using it easier than a regular one with my arthritis. This was my favorite meal in Korea because it’s a full experience. You’re putting ingredients in and taking them out and adding the noodles, and then the porridge at the end. My favorite ingredients to include are slices of pumpkin/squash and straw mushrooms :)
