A true rustic kitchen with pots that have years of experience and grease caked on and where the only measuring tool is the eye. I love a clean area a such as the next guy, but for his food I look the other way.

If you’re in luck go there early- I went there after work 4pm and the food was done- only thing he had for sale was the pork. 14 dollar plates- he ran out of rice first while I was on the line and then he ran out the octopus salad then at the end he was giving people taste of the pork. Also the mofongo ran out while I was on the line. Best time to be there is 12-1pm
True. I'd still order but if I get sick once that's it. But the pork cutting if he sells all that pork he makes his money back + profit. You can do it like that when you literally buying dam near whole pigs. Very few food trucks can even afford that. Usually store brought prepackaged garbage

You need to be more aware of your surroundings and not be too flashy with expensive things. My wife is German and I am Mexican. We recently traveled to the states of Zacatecas, Guanajuato, Jalisco and Nayarit over a 2-week period. We’ve done all the resort areas in the past which are beautiful so wanted something different. We loved it - the culture, architecture and food scenes mountains and beaches of these states. The last three states have lots of Canadians, Americans, and Europeans who have retired very comfortably in these parts at a fraction of the cost in some very nice places. All the best.
Ive seen this guy before on the net but dam I didnt know he was a fucking beast like this... he does all the prep from start to finish for all this and doesnt even weigh out that meat and nickel and dime you. His precision with that machette, dude is Jaques pepin of BBQ. They way he marinated and scored those pigs, then brokedown pre cook to fit his roaster and afterwards without any help crazy lol! So much respect for his effort.

@@nobodynothing2594 - good morning - I actually asked him when I was there - generally what he used to season it and I recall he mentioned salt, pepper, oregano and also rubbed it with vinegar and other spices. I think what we see on the video is probably some of that.

@@ghalder1674 in my experiences, generally it is safe but outside of the tourist places you can’t act like a tourist still. You need to be more aware of your surroundings and not be too flashy with expensive things. My wife is German and I am Mexican. We recently traveled to the states of Zacatecas, Guanajuato, Jalisco and Nayarit over a 2-week period. We’ve done all the resort areas in the past which are beautiful so wanted something different. We loved it - the culture, architecture and food scenes mountains and beaches of these states. The last three states have lots of Canadians, Americans, and Europeans who have retired very comfortably in these parts at a fraction of the cost in some very nice places. All the best.
Ive seen this guy before on the net but dam I didnt know he was a fucking beast like this... he does all the prep from start to finish for all this and doesnt even weigh out that meat and nickel and dime you. His precision with that machette, dude is Jaques pepin of BBQ. They way he marinated and scored those pigs, then brokedown pre cook to fit his roaster and afterwards without any help crazy lol! So much respect for his effort.
