I think I finally cracked it. If you roll the buns to the size of the hot dogs you're going to use, and just don't let them rise too much, they will be the right size once they're baked.

Hello, this is fantastic! The store bought buns are totally flavourless and do not hold together. I was wondering if you bake and then freeze them, if that is, of course, there are any left over, or can you roll them out and then freeze them, thaw them and then bake them? I don't always have time to bake something before making dinner. Thank you so much for this recipe. I have never made brioche dough so this looks like so much fun!

Yes, you can freeze the dough. For freezer: after the bulk fermentation/first proofing, you can portion the dough and freeze it. Divide the dough and pop portions into oiled freezer bags, seal close to the dough, and pop in the freezer.
When you need to use it you need to remove it from the bag as soon as possible, then allow it to defrost. Then roll it, proof and bake per the recipe. Hope this helps.

How long will the buns stay without the hot dog and can one put preservetive if for bussiness?
Gemma i noticed you placed the buns on the highest rack to bake. Do you also place hamburger buns there too? I would have put in the middle. 🤷♀️Fabulous recipe
I placed it on the top rack because it was the easiest to reach 😊 This oven is relatively new, and distributes heat evenly - so you can get an even bake on any rack.

Yes, absolutely. What is important is you use a sweetener that is able to caramelize when heated. Sugar, most natural sugars does that. Artificial sweeteners and other sugar substitutes only melt when heated but they don't caramelize. I have tried to make homemade hamburger buns but the problem I have is they puff up too much and aren't quite as big around as I would like them. It makes the bun difficult to eat because the top part is too high. Is this because I am not shaping them correctly or because I used a recipe that just puffs too much.
You said you can use this brioche dough for hamburger buns. Could you show us how to shape them, too?

I'm so intimidated by recipes using yeast! 😥 Do you have any videos or advice for first time yeast recipes?
If you are worried about the yeast working, you can always add your yeast to the very warm water and a little sugar in a bowl and let it proof which is when it bubbles and foams up, for 5-10 minutes. Then you know it's activated, and you can then add that to the rest of the ingredients in the recipe.
I know the feeling, but I say, give it a go as a start. Bread making can be scary but once you get used to it, you will feel more confident in making yeast based breads. Just take the first step. 😊 You can do it!
I know how you feel; I have had the hardest time with breads. But, I finally found the perfect bread recipe! It looks long, but it's really simple (no kneading, and I have yet to ruin it!). Before I put in the recipe, also check out Easy Yeast Rolls on Allrecipes. Super simple & worth it. I don't have packets due to buying yeast in the pandemic, so the amount I put is the same as 1 yeast packet, in case that's what you have😊
SIMPLE SANDWICH BREAD
3C All Purpose Flour
3Tbsp Vital Wheat Gluten
1/2Tbsp Salt
________________
1/2Tbsp Sugar
1/2Tbsp Yeast
1.5- 2C Hot tap Water (about 100°F)
________________
Olive oil
2Tbsp Butter
-Mix flour, gluten, and salt (gluten is optional)
-Make a well in the center of the flour. Add sugar and yeast
-Fill with warm water
-Let sit 2 minutes
-Butter 6" loaf pan generously
-Stir water into dough (add up to 1/2C if dry)
-Remove dough & oil bowl. Replace dough. Cover & rise 1 hr in warm spot.
-Cover dough in oil. Stir.
-Place dough in pan. Cover and let rise 25 minutes
-PREHEAT oven to 375°F
-Bake 45 minutes (it only takes mine 35, but I'm at altitude)
-Rest 20 minutes
-Enjoy!
I often make 2 at a time to last me the week. You need to cool completely if you want smaller slices, but don't go too thin. Soft & delicious every time!
Is the Cat Tea towel obligatory?
It's highly recommended. You can use other designs, too 😊
