  • preheat oven 160°C
    16cm circle pan, 16cm baking paper, brush butter
    cream cheese 160gr
    butter 40gr
    steam in hot water
    milk 50gr
    off heat
    yolk 4
    cake flour 40gr
    clean bowl
    beat egg 4 whites
    foamy add sugar 80gr
    until stiff
    fold together
    pour all in the baking pan
    pour water in the tray
    bake for 20 minute 160°c
    then open the oven door to reduce until 110°C bake again for 60minute
    after done wait 10mn
    unmold then put in the freezer until next day for better taste
