  • "That smells good. I could smell it when I was coming in." Pop Jones says he can smell the goodness all the way in the garage as he was coming in from work. These little delicious bites in gravy are absolutely amazing and so easy to make. You can do them in the pan as I did, or bake them in the oven as our family before us did. Either way, I hope you make them. Original recipe below as well as the changes I made.
    Enjoy!

    Ingredients:
    1 lb ground chuck
    1/2 cup seasoned bread crumbs
    1 egg
    1/2 cup onion, diced
    3/4 tsp salt
    1/2 cup uncooked rice
    1/2 tsp paprika
    1 tsp garlic powder
    1 Tbsp oil
    Directions:
Drizzle oil in large frying pan.
In a large bowl, combine ground chuck, breadcrumbs, egg, onion, salt, paprika, garlic powder, and rice. Make golf ball size meatballs and flatten them out into patties. Add to frying pan. Cook until golden brown on both sides. Remove from pan and set aside. Make the brown gravy.
    Brown Gravy
    2 Tbsp oil
    2 Tbsp flour
    2 Tbsp brown gravy mix
    1 Tbsp beef bouillon
    1/4 tsp balsamic vinegar
    2-3 cups beef broth
Heat oil in a pan. Add flour and cook 2-3 minutes stirring constantly. Add brown gravy mix, beef bouillon, and balsamic vinegar, stirring well. Add beef broth until the right consistency, not too thick but not too thin. Add patties back to the pan with the gravy and let it simmer on low about 20 minutes. Serve and enjoy!
    Original Recipe:
    1 pound ground beef
    1/2 cup breadcrumbs or oatmeal
    1 egg, slightly beaten
3 cups tomato juice or 1 can tomato soup and 2 cups boiling water
    1/2 cup onion chopped
    3/4 tsp salt
    1/2 cup uncooked rice
    1/2 tsp paprika
    2 Tbsp green pepper chopped
    Directions:
Mix meat with crumbs, beaten egg, onion and salt. Add green pepper and paprika to meat mixture. Add uncooked rice. Shape into small cakes. Pour tomato juice over cakes, or if tomato soup is used, add 2 cups boiling water to soup and then pour soup over cakes. Put lid on pan and cook over low heat 45 minutes or put in 400 degree oven and bake for 45 minutes

I love porcupine meatballs but my husband’s not a meatball fan but I bet he’d eat porcupine discs. Thanks for sharing this family favorite recipe with us, I’ll for sure be trying these. My husband and our youngest daughter likes to put a spoon full of corn in the well of mashed potatoes then gravy over it all.

What a wonderful cookbook! It is surely a precious family heirloom. . . and it keeps all the memories alive with every meal made. When I was a child, I thought porcupines were so elegant. Probably because we had them so rarely.

Hi Karen, Porcupines was one of the first recipes I made when I was about 14. I found it in the women's companion cookbook that my grandmother gave to my Mom. Fast forward 50 years, and I haven't made them in a while, but your recipe has me wanting to make them. Thank you for the memory boost, and thank you for sharing your recipes. 🙂♥️

Porcupine meatballs are still a favorite meal for my family. We cook them on the stovetop and simmer the balls in tomato soup and water. There is usually some loose rice that thickens the tomato soup and it goes great with mashed potatoes and peas. We had porcupines for dinner just a few weeks ago but now I'm hungry for them again!
