His Favorite, Meatloaf Supper, with the creamiest mashed potatoes you will ever eat

- I can't begin to tell you how much my hubby loves meatloaf. I think he would eat it 3-4 times a week if I made it, then eat meatloaf sandwiches with the leftovers. It's not a hard entree to prepare, it's easy, simple, and a downhome comfort food. We like it with brown gravy, so that is what you will see me making it with today. If you like the ketchup, tomato sauce topping, by all means, use that. Just leave off the gravy. But you might still want the gravy for those creamy, dreamy, mashed potatoes. Directions below.

Meatloaf
1 1/2 lbs ground chuck
1/4 cup onion, chopped, or more if you want
1 egg
salt & pepper to taste
bread crumbs, I used about 1/2 cup
1/4 half & half
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1 Tbsp parsley
Preheat oven to 425 degrees
Mix all ingredients. Line a sheet pan with foil and spray with nonstick spray.
Turn mixture out onto pan. Shape into a loaf. Bake 40-50 minutes.
Mashed Potatoes
Cube potatoes, as many as you need for your family. Cover with water, add salt to taste, boil until tender. Drain water from pot. Leave potatoes in hot pot to dry up excess water. With wire whisk on hand mixer or stand mixer, whisk potatoes until fluffy. Add butter to taste. Pour in buttermilk a little at a time until fluffy.

it looks delish! add a bit of rice in your onion spice, it will keep it from clumping, takes moisture out...😊

Love meat loaf, I do mine similar to yours, I also like brown gravy instead of red. I use a potatoe masher on my potatoes and I like to leave some lumps in the potatoes - that's the way I like them.

I took care of my in laws 24/7 for 13 years. My mother in law could make an old shoe taste good. Once she became unable to cook, she enjoyed coming up with new recipe ideas. One day, I was going to make meatloaf. She suggested doing a BBQ meatloaf. We mixed in onions, garlic, chopped sweet Italian peppers and BBQ sauce. We threw that and some baking potatoes on the grill. It was delicious 😊

Normally, I don't like meat loaf either, but my mother made a great one: Equal parts of seasoned beef, pork and lamb, topped off with scratch-made barbecue sauce.
It was served with rich garlic mashed potatoes and a green vegetable or chef's salad.

Tomatoes are really good fried this way I think. The flavor of the tomato is showcased. You can fry squash and okra pretty much the same way.

Beautiful meatloaf, mashed potatoes, and brown gravy! We enjoy a lot of frozen brussel sprouts too. Can't beat them. Karen that is one moist meatloaf. The great thing about making meatloaf is you can make however you like it, red or brown and add whatever! Super meal⭐

I know I am late to this party but I am glad that I watched. Your food looks yummy and also nutritious too. I love your southern accent when you speak. It makes me lonesome for Texas. I know you are in Alabama but still a sister from the South. I have never made gravy just did not have the talent. When I made meatloaf I used ketchup or mild honey BBQ for a gentle topping. I've never seen anyone do fried semi-ripe tomatoes before. It really does look good! I've never had meatloaf with brown gravy, but I have to say that I think I would like it, especially with creamed potatoes to go along with it! Thanks Karen!
