  • Cooking every meal from scratch can seem like a complicated and time-consuming endeavor if it is not part of your normal routine. In this episode, Cami and I aim to change your mindset around cooking from scratch and show you how truly simple and fast it can be. We start out by giving you ideas of meals you can throw together in a pinch without sacrificing quality. Then we dive into meals that take a little planning ahead, but don’t require you to spend all day in the kitchen. If you have a goal of cooking from scratch more this year, we hope this episode encourages you with how simple it can be and how valuable it is to your family.
    In this episode, we cover:
    - What ingredients to keep stocked in your kitchen so you can always throw together a quick meal
    - Meals you can pull together at the last minute if you haven’t planned ahead
    - The few staple appliances that make it easy to whip up last minute meals
    - Some simple meal ideas that require a little planning ahead but are not complicated
    - How cooking meals from scratch is actually simpler than you may think
    - Shifting our mindset around cooking from scratch and why it is valuable
    - Leaning into the creativity of cooking from scratch
    - Practical strategies for cooking meals from scratch when you have little ones underfoot
    - How to approach meal times with picky eaters
    - Cooking healthy meals from scratch on a very tight budget

People underestimate the power of pasta water to thicken anything. Save that water! Drain it into a container and keep it in your fridge ( not forever let's use common sense here) but, it can be used as a thickener when you dont have alot of milk or heavy cream. You can freeze it too. But, if i make a pasta dish, I save the water, then plan a couple other meals where i can use it. Or just freeze it in a container. Use it in a soup later...and so on, it takes 2 minutes to save it. This was alot of great information. Wish I'd had a group of moms to listen to when I was young. Your doing a great service for mamas that need to hear this! Perfection doesn't exist! And nothing has to be pinterest worthy. Memories aren't going to be on pinterest.

Instant pot: 4 cups rice & 5 cups water, push rice button and when done fluff, put in small one/two cup containers in the refrigerator for use in various meals during the week. My daughter (26) loves making eggs with onions/peppers (from summer harvest chopped and frozen in kitchen freezer) and rice (from refrigerator) as a go to meal. I freeze yogurt with fruit in small containers to take in my lunch bag for work so it’s slightly thawed by the time I eat at work. I bake bacon on my ceramic cookie pan, put the bacon in the refrigerator for sandwiches after it’s cooked, add olive oil to the bacon grease and pour sourdough discard over the greased pan, bake 35 minutes on 350’F and we have yummy flatbread to add to scrambled eggs or soup. 😊

As an older cook I found that having cooked meats in the freezer was a game changer. Such as browning ground beef I brown extra and cool and freeze enough for an extra meal. I do the same with chicken. I roast/boil at least 2 so that I have extra cooked chicken to add to chicken pot pie or chicken salad. My go to motto is cook once eat twice(or more).

I think some of my friends just don’t understand why it is important for me to feed my husband and son well. After being at school from about 6:15-5:00ish, they think cooking is not important, but feeding my family is my gift to them. My way of showing them how much I love them. Im a mum of nine and cook from scratch and for me, i like to do a big batch of minced/ground beef and onions, from there i can make a stew with potatoes and carrots and seasonings, then a cottage pie or then a bolognese and with a bolognese you can then make a lasagna or a chilli. Ground beef is such a great startingbpoint for lots of other meals because of what you add to it. Also soups are super fast food once cooked, are easy to prepare throughout the day if necessary and are really frugal as the broth stretches the ingredients so much further. This was a great video ladies. 😊

lol I had to laugh about the kids interrupting while you’re trying to cook. When my boys were small ( 4yrs, 2. 1/2 yr, and 6 mo), I remember being in the kitchen and wearing headphones so it muffled their loudness but I could see that they were fine and I could continue working knowing they were ok , just being boys, and eventually they discovered that mom “didn’t hear” when they complained about the others so they stopped complaining. And sometimes I gave them a “job” to do such as washing the veggies or putting something in the bowl. You just have to go with the flow. lol. Happy home making 😊🥰

I have done this on days I’m really stressed. It helps! It helps me reset and be more present with my kids. We have 5 kids and sometimes it’s just a lot of voices. I’m with them 24/7 as we homeschool so “stepping away” for an hour or so in my brain while being physically present is helpful.
And I’m sorry to the mama above who’s missing her child’s voice. Truly. That would be heartbreaking.

I grew up with this kind of cooking, but when I got married I was shocked how my husband was use to meals having specific names... soup was anything you ate with a bowl and spoon, potatoes and gravy was anytype of meat and gravy you had, hotdish is a one pot meal... it gives the cook so much grace with no expectations for specific meals... and it always tasted great! My husband has come around to my way of cooking and enjoys it 😊

My go to easy meal is just ground beef (or lately, venison) with seasining that i change up depending on mood. Sometimes I do ginger and garlic, sometimes taco, sometimes Italian...then i make potatoes in some form or rice. If I'm ambitious ill also steam some veggie. This mix is my best eaten meal by all 4 of my kids. It seems like the more thought goes in to my meal the less my kids like them. We also all love baked chicken that I break down, season and put oil on so the skin gets nice and crispy! This time of year we also do a ton of stews and soups. Sometimes I just throw left over meat and frozen veggies with stock and seasoning and simmer for a while

Good content! I got rid of my air fryer because of the non-stick coating and we only seemed to use it on the rare occasion we bought a convenience processed food. I got rid of our insta pot because I was only using it for bone broth and yogurt, both of which I can make in a pot on the stove. My husband didn’t enjoy the pressure cooked meals. My go to fast meal is goulash. My family LOVES it and I only make it for them when *I* need to make it for ease, so I will always keep a jar of marinara, a pound of ground beef and organic elbow pasta on hand. They never complain. We almost always have leftovers or a batch of soup in the fridge. We only get takeout when we WANT it and it’s very rare here.

I do fruits and veggies (cut up to safe sizes or in cute little shapes with those really small cookie cutter things), crackers, deli meats or salami, and some cheese/string cheese. I leave it out for like an hour in a party platter then put it in the fridge and put it back out when they’re snacky. It’s nice because you can change everything out seasonally and use any variety and combination of fruits, veggies, dips (homemade or store bought), crackers, meats and cheeses. The combination is literally endless. I also love to make homemade no bake granola bars like the store bought ones but healthier. That’s when I’m feeling extra😉 but they go so fast haha

My grandmothers didn't cook and were bad moms in general (neglected all their kids). They were born in 1916 and 1922. My one grandma was a waitress. One grandma was very poor the other quite rich. I don't know how their kids even ate or survived. My mom said her older sister cooked for her siblings and her (there were five of them). My dad's oldest sister cooked for him (she is 10 years older than him). Both of those sisters married at 17. Guess being the mom of the siblings made they grow up fast.
I had really picky eaters who did outgrow it in their teen years.

I love having a bunch of ingredients on hand and cooking meats ahead of time for quick meals. Also growing a garden can help save money.
I hear about people canning soups or other things for quick meals. I prefer to can ingredients like plain tomato sauce instead of pasta sauce or pizza sauce. I'll just grab the sauce and add the flavor I want. It only takes a few seconds especially if you have some spice mixes already made up. Then I can use it for whatever I want. Soups done this way are still fast. Frozen shredded chicken, a jar of broth, a jar of green beans, carrots, potatoes, celery, and season it while it warms up. Done.
Taco dump = add frozen leftover taco meat, a can of beans, salsa, corn, and diced tomatoes, season more if needed while it warms.
Cook up ground meat and add tomato sauce and pasta seasoning, while boiling spaghetti or pasta.
All easily made in 10-20 mins.

Hi girls. Love your videos Lisa. I’m 62 year old of one daughter who I had at 40 years old. Boy I wished I had known about all the natural foods. Although my Mom loved cooking and we had homemade foods growing up. Unfortunately I’ve really backslid in using convenience foods. I’m gonna work on getting rid of that mindset. One thing that I did when my daughter was little about eating foods is, I would tell her, “Honey you just have to take one bite and if you don’t like eat you don’t have to eat it.” 9 times out of 10 she liked it. So needless to say, she ate onions, garlic, seasonings, spicey ect. as a child. To this day she always tries new foods. She’s 22 years old and not picky 😂 Happy New Year and God bless.

This podcast was of value to me even though I must be fully prepared because of food allergies and sensitivities. I cook and freeze foods because I cannot get caught with nothing. We cannot just grab a package of something, not pasta, not gluten free pasta, not rice. Nothing. So for example right now, I have beef short ribs in the crock pot. In the freezer, I have a ground beef and cauliflower rice mixture with fresh garlic, cooked Chuck roast in pieces easy to reheat in the oven, crispy bacon strips, grilled chicken breasts, etc. I’m planning on buying another crockpot. I can use three of them to cook up this protein and freeze it, but two will have to do because of counter space. We also have busy weekends, so I try and intensify my batch cooking so we have food to eat over the weekend. Basically, we eat meat, vegetables, and some fruit for a carbohydrate. No nuts, seeds, coconut, grains (corn is a grain), eggs, dairy, not even raw dairy, unfortunately. I’m sure I’m leaving some food out, oh, no nightshades, not even the spices. Next I’m planning on trying a ham shoulder in the crock pot. We love a huge salad for lunch with protein. I make my own salad dressing with fresh squeezed lemon and olive Sometimes, for a treat, I’ll add peanut butter and a light sprinkling of stevia to the salad dressing, the peanut butter with just peanuts. I dump out the oil that’s in the peanut butter jar and add pure olive oil to the peanut butter. Peanuts are a legume. Thank you for these thoughtful videos. I love listening and learning from you and your guests. Blessings! Oh, and I’m 60 years old. Haha and still do this. We eat a lot of meat, (breakfast, lunch, dinner), so it’s imperative that I have our freezers stocked with cooked protein.

Daddy Dinner is our favorite quick meal. It’s named this because my husband who never cooks came up with it.
    4lbs ground beef
    8 medium potatoes
5 cloves garlic (or garlic salt to taste)
    Salt and pepper
Sauté onion and garlic, add chopped potatoes and ground beef, salt and pepper.
    Serve with sauerkraut and ketchup.
