Yeah I'm always trying different brands and styles of salsas trying to find really good ones and they get pretty expensive. I finally realized buying the fresh ingredients was only a little bit more, and making it yourself is easy and so damn worth it. It's way better homemade
For some reason the stems are required in the recipes. I have old handwritten recipes I got with a 50 year old molchate I got on ebay. Said must be stems and not all leaves. Perhaps someone with exact knowledge will chime in.
I got the recipe from El Torito in San Diego when I went to buy 3 pints of salsa, it was on a post card. The manager gave it to me when i asked for the recipe. Its not the one that is all over the internet. Had salsa and the guacamole on the card. No sugar in it. If you want I can give recipe I got.
The salsa was so good I ‘am really thankful for the recipe and cheap too, some thing you can afford.

Good recipe, but go for a teaspoon of sugar instead of a tablespoon of sugar. It was too sweet.

It's optional but it hels to cut the bitterness, you don't need much.

Sugar helps to reduce the bitterness, although it’s not an essential ingredient it is used often in salsas depending on your taste.
What's up with every recipe using canned tomatoes? How come no one uses fresh tomatoes? Lol.
