Baked Aubergine with Tofu 🍆🍆 Vegan

    Ingredients:
    500 grams Tofu or meat, cut into small pieces
    3 eggplants
    3 tomatoes
    3 onions
    5-6 green peppers
    1 head of garlic
    1/3 cup vegetable oil
    2 cups cold water
    1 tablespoon tomato paste
    1 teaspoon red pepper flakes, salt, black pepper
    Instructions:
    In a baking tray, chop the Tofu into small pieces.
    Dice the other vegetables in the same way.
    Add spices to the onions and slowly start rubbing them to soften.
    While rubbing, add the tofu and continue rubbing with it to combine flavors.
    Finally, mix all the vegetables.
    Pour cold water over the mixture.
    If possible, send it to bake in wood-fired ovens in local markets, especially in Elbistan, but if this option is not available, you can also cook it at home.
    This dish is often made during summer in Elbistan. It is enjoyed with flatbread, especially when cooked in communal ovens in town markets.
