I also appreciate you explaining how your physical state prevents you from being super curious, talking to locals and absorbing the culture like you wish you could.. I understand that and I think this side of travelling is rarely talked about. I also praise you for listening to your body and not forcing yourself to immerge in chaos when that's clearly the opposite of what you need. Not every trip has to be "maximized" or to be about absorbing/learning as much as possible through external means. I hope you're feeling better now.
My parents took me to Ladakh when I was 8. i still have some beautiful memories in my head of Ladakh. You should try Goa or south coast of India in future which will be less hectic, intense also more tropical and quite peaceful.
