- 仁当鸡是东南亚一带国家的传统料理，这道料理不止限于鸡肉也可以用其它肉类如羊肉，牛肉等替代，用了多种辛香料来增加香味，是一道风味非常独特的料理。
仁当鸡(Chicken Rendang)通常只为特殊场合烹饪，像是婚礼或者地方首领的加冕典礼。
想学习煮顿冷当大餐吗，学马来人那般，用手抓饭，痛痛快快地吃一顿把！
材料: Ingredients :
3个半鸡腿 - 3 ½ chicken drumsticks
120~140克 椰丝 - 120~140g Shredded coconut
调味料:（A）(放到搅拌机里打碎) Seasoning: （A）(blend using blender)
70克 辣椒干(浸泡30分钟) - 70g Dried chili (soak for 30 minutes)
80克 生姜 - 80g ginger
20克 黄姜 - 20g Turmeric
20克南姜 - 20g galangal
80克 小葱头 - 80g shallot
60克 蒜米 - 60g garlic
调味料:（B） Seasoning: （B）
半碗油 - ½ bowl of oil
3条 香茅 - 3 lemongrass
两条桂皮 - 2 Cinnamon
5朵丁香 - 5 clove
一朵八角 - 1 star anise
375ml 椰浆水 - 375ml coconut milk
1~1½ 茶匙盐 - 1~1½ tsp salt
15克 马六甲椰糖 - 15g Gula Melaka /Palm sugar
5粒小豆蔻 / 绿豆蔻 - 5 pcs Cardamom / Buah Pelaga
1片 黄姜叶 - 1 Turmeric leaves / Daun kunyit

Kerisik boleh blender pk grinder , tambah minyak kl terlalu sikit. Kena tambah daun limau purut n buah pelaga dan sedikit asam jawa...ini baru resepi rendang indonesian. Boleh tambahkan potato atau telor pon sedap.

我的舅妈是马来人，我舅舅每年马来人新年都会邀请我们一家人到他家吃饭团聚。从小就吃惯舅妈煮的正宗仁当鸡，而且不管我们自己怎么煮，都煮不出舅妈这道拿手好菜的味道，即便舅妈对食谱倾囊相授，很大可能是火候掌握的关系。对比了安娣您的食谱，发现和我舅妈的食谱很相似呢！煮好后的样子就是百分百一样，所以我相信绝对好吃！

Love your channel auntie. Thanks to you and Kakak to share this very nice Indonesian Style rendang. I used cardamom powder, unfortunately I can’t find daun kunyit. I used lime leave and taste good too. I can find palm sugar in China Town and it really taste better than regular brown sugar. Thanks auntie.
