💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Peanut brittle was a favourite of mine as a youngster❤ then at 42, I developed a severe allergy to them and all nuts. I miss eating it!!! Thanks for another great video🇨🇦

The pouring of the dry ingredients.
The "plopping" of the foamy phase onto the table.
And the stretching & cutting & breaking as it cools & is loaded into the big container.
I personally prefer dry sounds instead of wet sounds, so the cooking & stirring was not my favorite part, but I know others really like those.

Chefs always talk about needing to roast nuts before using them in a dish - does the process of incorporating them into the brittle while it's still cooking, essentially roast the cashews? Or they become the equivalent of roasted by the time the brittle is done? Really interesting process!
Good question! By the time the brittle is done the cashews are cooked
What is that plop of glop they drop in there, like big heavy snot wads at the beginning?

We do carry cashew brittle, but no, we've never made pistachio brittle before
What does the baking soda do?
It adds air to the batch, which makes it fluffier and not so hard
