I think the "World of Light" trailer really proves your point. Aside from Kirby being Sakurai's baby, I believe he was chosen to be playable first because of the simplicity and accessibility of the character like you mentioned.
That's also part of why he's one of the first playable characters in the Subspace Emissary, and why he's the only character you start with for the Great Maze.

In a game design perspective, Kirby is a wayyyyy better choice for a starter character than Palutena. She is too technical for new players to learn the basics of the game.

12:22 the idea that kirby teaches people how to play has new meaning now that he has been confirmed to be the starting character for the story mode of smash ultimate.
A few things you missed:
1:Kirby`s throws also follow the directional rule, but do so with such extravagance to emphasize said rule.
2:The reason his side special is a powerful but slow and risky hammer is to help show that, for many characters, side specials are very powerful moves that could make you vulnerable if used in the wrong place. This lack of spamming was emphasized further with the recoil damage.
3:Kirby`s copy ability means that he is actually one of the harder characters to master, as you have to have knowledge of every other character`s neutral special and be able to improvise combos with said special. Just like his games, he is easy to learn, but hard to master.

This is such an interesting video to go back to now that Sakurai has his own CZcams channel where he delves into design and his own philosophies on gaming. Watching him speak on how he went about making the first and second Kirby games, I was very much reminded of you talking about the exact same thing here. Making games for people who have never even touched a controller before while at the same time keeping things interesting for veteran gamers, it almost felt like he was the one who took inspiration from you! I think that just goes to show how well made and well researched this video was, that you can speak on his ideas at a similar level to him.

As someone who always played Kirby back in 1999 and onward (I main other characters now), you really showed how Kirby is really a well-designed character and explored Sakurai's game philosophy. When I got super smash bros the first character I chose is Kirby and I learned so much with that character and a couple days later I beaten my brother cos when I first got it I was the getting beaten, my brother chose meta knight first btw
The first character I played is Captain falcon and that teach me that high range attack is fucking cool, then I took link and learn that high range attack is pretty damn cooler. Finally I discovered Bowser and his ability to make you understand that close combat is the best and that nobody would never invite you to his birthday party ever again.

Went to a small tournament recently, and my friend had never played Smash Bros before. I recommended Kirby to him and he had a few minutes before his first fight, so he practiced for a bit. He won his first battle as Kirby with a few minutes of experience!

I think he should be able to inhale projectiles and shoot them back as stars.
If his f-air were the air gun, I can just imagine people doing it by accident and falling to their deaths. As for spitting out or copying projectiles people throw at you, I would really like that! It would be make Kirby a more unique character. It would also be a nice option, and I imagine it would be too slow to make it OP. I'm pretty sure the only reason he can't do that is probably for balance purposes; enough people hate Kirby already, and him having such an easy way to copy/nullify projectiles would make people more annoyed.
It's funny how the Kirby shirt is a sly nod to the anime when Kirby hold a chocolate bar in the same pose and holds it horizontally!
