Today, we're in central Trinidad with my niece Kashi making a beloved snack, trini cheese paste sandwiches.
My mom used to make these colorful sandwiches for us to take on school trips and I recall that they are also served during wakes with Hong Wing or Nescafe coffee.
They are also perfect for summer gatherings, Trini limes, parties, BBQs, or picnics.
Cheese and Caribbean seasonings come together to create a taste sensation like no other.

10 oz cheddar cheese
6 tbs butter, 3 oz, 57 grams, room temperature
2 inches carrot, 2 oz
2 tablespoons mustard
¼ cup evaporated milk or mayo
2 pimento peppers
Hot pepper or pepper sauce, to taste
2 cloves garlic
2 tbs minced bandhania(culantro, recao), optional
Coloring, optional
1 loaf white or whole wheat sliced bread

my mom used to make yummy well seasoned cheese paste sandwiches for classmates' bday parties in primary school. nothing like ole time bday party treats.

very similar to american pimiento cheese, interesting! i guess we have different definitions of pimiento peppers though, as ours are red and very sweet and what you're using i would call a pepperoncini or anaheim pepper. but i will try this recipe, my husband has fond memories of cheese paste sandwiches growing up in trinidad!

Yummy. Love it. I don't use much butter, I use Mayo. The butter upsets my stomach. It's still comfort food for me😊
I use to beg my mum to buy the coloring and she would say no. So it was plain yellow for us but whenever there was a school bazaar, or event at the temple etc. there would always be a colorful cheese paste sandwich with aloo pie and saheena in a box for sale. Too many memories, glad to see its still around. 😋🥰🍞🧀

The old fashion way is so much better than adding all those extra ingredients in it, that’s not how u make cheese paste growing up ! Simple is better !
